Marshmallow Creme Vs. Regular Marshmallows

Does anyone know if Marshmallow Creme is better to use for MMF vs. regular Marshmallows? I've used regular Marshmallows several times but someone mentioned using the creme. Tell me what you think or know from experience.

Well, when substituting you have to add Karo syrup to marshmallows to = marshmallow cream. You could try it w/ the cream, but omit the corn syrup the recipe calls for.

I read the ingredients on everything...it's a habit that I can't break. And marshmallow creme doesn't have any gelatin in it, but marshmallows do. I guess if you were trying to make a vegan fondant, the creme might be good to use...but otherwise, isn't the gelatin what makes the fondant stretchy?

Corn syrup does the same as glycerin, just not as well. So, if I use glycerin I use what is recommended in the recipe, if I use corn syrup I use a little more. Not sure what gelatin does, but it's glycerin that aids in elasticity.


Foodsubs.com is an AWESOME site!! Their sub is 16 oz marshmallows + 1/4 C corn syrup = marshmallow cream (don't know the amount though)
