Need A Mojito Cake Or Cupcake Recipe From Scratch Please...
Baking By Melonie1005 Updated 5 Sep 2009 , 10:15pm by Melonie1005

I am searching for a scratch Mojito cake recipe. I found the one on visual recipes.com, it had great flavor but was like eating a sponge. Would anyone be willing to share their recipe with me?
Thanks for any help,
Melonie

I made some mojito cuppies,in my photos. I used a white cake as the base mix and added rum flavoring, chopped fresh mint and some lime zest. I flavored my frosting with just lime juice and zest.
You can google and find lots of recipes.
They were a big hit and a nice flavor change.
Have fun!

You know, I had an idea when I was at the store the other day. I was buying frozen lemonade concentrate to use to flavor a cake, and I thought I would try some other flavors too, because they had so many yummy-sounding fruit mixes. There were also frozen drink mixes in there that you would mix with liquor to make tasty frozen drinks- and one of the flavors was Mojito. There was also, like, Fuzzy Navel and some others. But I remember thinking those sounded delicious and wondering if they would work to flavor a cake. I don't know why they wouldn't, since the lemonade does. I would just be careful not to add more than maybe half a cup, I have had some awful sinking-in-the-middle cakes from too much citrus.

Thanks for all the help guys! NCBERT I went ahead and took your idea and used the cake mix..everyone thought they were fantastic..Thank you.
Now after I have had time to think, I could have used my rum cake recipe and just added mint and lime..I wonder where my brain is sometomes . Thanks again, Melonie

I made these same mojito cupcakes recently, but I used Italian Meringue buttercream and added a few tsp. of Midori Melon liqueur to it. it was SO delicious it is now a regular recipe of mine!

mmmm, that sounds wonderful also! Thanks for the tip.
