

I use this one all the time. It's quick and tastes great! Everyone I've made it for seems to like it.

this isn't exactly coffee cake but it is gooood! it is the same as Harry's Farmers Market which is famous but they call it hummingbird cake mine is the exact same but called mockingbird cake. I use different pans depending on the occasion.
This is one of my favorites! Frost this with a cream cheese frosting for a bruncheon, or a spiced fruit glaze for an evening dessert.
3 c. flour
1 tsp. salt
1 tsp. cinnamon
3 eggs, beaten
1 1/2 tsp. vanilla
1 (8 oz.) can crushed pineapple, juice and all
2 c. sugar
1 tsp. soda
2 c. nuts, chopped
1 1/2 c. oil
2 c. bananas, chopped
Combine all dry ingredients in large bowl. Add eggs and oil, stir until dry ingredients are moist, stir in vanilla and pineapple. Add nuts and bananas. Pour into a greased and floured bunt pan. Bake at 350 degrees for about 35 minutes, longer or in oblong pan 9 1/2 x 13 inches. Let cool in pan 5 minutes, then turn onto a cooling rack and frost when completely cool.

I use this one alot,
1 stick of butter
1 cup of sugar
2 eggs
2 1/2 cups of plain flour
1/2 teas of each salt, baking soda and baking powder
1 cup of butter milk
1 teasp of vanilla flavoring
Mix butter and sugar, add eggs than flavoring combine flour,soda,salt and baking powder together add to mixture alternating flour and milk.
Topping
in separate bowl mix
1 cup of brown sugar
2 teaspoons of ground cinnamon
6 tbsps of butter
4 tbsps of flour
1 cup of chopped nuts ( always use pecan)
Pour half of batter into bundt pan
add 1/2 of topping
pour in rest of batter and add rest of topping
bake @ 350
