

This is the basic recipe that I use. I have type 1 diabetes and I have to watch my carbs. So you might want to ask your friend if they are watching their carbs or not. I notice a lot of "diabetic" recipes have a lot of carbs in them. HTH, Kristen

I agree about making sure whether or not it's low sugar.. or low carbs that they want.
My dad is a type-1 diabetic and doesn't really eat anything that label's itslef "low-sugar" because the carb count is still really high. The thing my Dad appreciates the most is when I figure out the total carb count of the stuff I bake so he can factor it in when he gives himself insulin.

Also.. as sugarshack noted, splenda.com does have a lot of recipes. They even have 'splenda for baking' and a version of brown sugar.
