Carrot Cake Without Walnuts

Help,
I have a co-worker who is allergic to walnuts. I would like to make her a carrot cake, but am wondering how it will come out/taste without walnuts. Can I simply omit them from the recipe, or does someone have a walnutless recipe they would like to share?

You can defilitely omit them from your favorite recipe and still have a great cake. I never put nuts in carrot cake because I hate nuts in things. I'd find out exactly how allergic your co-worker is though because if it's severe they might not be able to eat your cake because it was prepared using equipment that has come into contact with them. Yes... it can be that bad. If they say it's fine as long as walnuts aren't in the food then you are in the clear. icon_smile.gif

I have a recipe posted that has no nuts... it has no whacky things like rasins or pineapple either.. just straight up carrot cake and it's a wonderful cake. I don't like the carrot cakes that are kitchen sink type recipes so this one suits me perfectly.

I think a carrot cake without the nuts would be missing a lot! (You can tell I love nuts) Could you use pecans instead of walnuts, or is she allergic to all nuts?

I have a peanut allergic son, and actually advertise as a peanut/nut free kitchen....definitely check on the severity of the allergy, cross contamination is a high risk for some people....icon_smile.gif

I love nuts... just not in things. I could eat walnuts all day but don't put them in my carrot cake... I might smack you... LOL icon_wink.gif

i only make cakes with nuts on request. i rarely put nuts in my carrot cakes, and they come out just fine.

I have never, ever put walnuts in a carrot cake. I don't put raisins in there either. No problem. And for customers, I don't add nuts unless specifically requested. And I try to talk them out of it.

Hi, I just posted my carrot cake recipe. I titled it carrot cake (nutless and no pineapple). I get so many complements and requests for it and I hope it will help you. I do pack the cups of grated carrots and it has 1 cup of oil so it is very moist.

YUP...I make mine without nuts and raisins (I know people can be deathly allergic to both of these) so I never add them and my carrot cakes are wonderful!!!

Phew... I'm glad I'm not the only one who doesn't like nuts in their baked goods.. LOL. I never put nuts in client's cakes unless asked and I can't talk them out of it for allergy reasons.

The thought of banana nut bread makes my skin crawl... to me why ruin perfectly good banana bread. icon_lol.gif I know some love it, but I have never cared for it. I do make a kitchen sink cookie with pecans that I like... but that's my limit. I don't even like pecan pie.
