Coconut Cream....anyone Have An Outstanding Recipe?

Looking for a from scratch recipe that is flavorful & a definate keeper. The ones ive tried have a very muted flavor. Thanks in advance!!

I love this recipe- I make it for one of my friends who is a coconut addict and she loves it too! I hope you'll enjoy it!
1 baked pie shell of your choice- graham, short dough, oreo crumb ( I'll often mix a little ( 1/4 cup?) flaked coconut into the crust)
2 cups of coconut milk
4 1/2 ounces creamed coconut
3 egg yolks
1/2 cup superfine sugar
generous 1/2 cup AP flour
1/4 cup grated coconut
2 tbsp. dark rum
1 1/4 cups whipping cream, whipped
optional fresh fruit to garnish...pineapple, mango, carambola
Bring the coconut milk and creamed coconut to a simmer over low heat. The coconut cream should melt in and the mixture should be smooth.
In a bowl, whisk the egg yolks with the superfine sugar until pale and fluffy. Whisk in the flour. Pour the hot milk over the egg mixture, stirring constantly. Return the mixture to the pan and heat gently, stirring constantly for 8 minutes or until thickened. Stir in the grated coconut and rum. Pour into the shell and cover with saran wrap. Refrigerate until cool. Garnish with whipped cream and/or fresh fruit. Keep refrigerated until serving.
