I tried the spice and baking aisle, but to no avail. The grocery store clerks keep sending me to the tartar sauce aisle.

Can I make IMBC without it? My former chef friend says I don't need it, but it's in my recipe (from CC) and I've never made it before so I don't want to deviate from the recipe.

What does it do exactly?

To the best of my knowledge cream of tartar helps stabalize whipped foods. That's why some people use it with their egg whites in meringue.

Do you have another store you can try? It really should be there with the spices. I think it's made by McCormick. Mine is from a bulk place so I'm not positive.

I think it acts as a stabilizer and it should be with the spices

Cream of tartar is located in the baking isle - it is in with the spices that are usually in alphabetic order (McCormick brand usually). I don't know what it does but I have used it in a recipe for Snickerdoodles. This is the only recipe that I have ever used this product in.

It definately should be in w/the spices and yes, McCormick is one brand.
Sorry have never made IMBC so can't advise if it is *necessary*.

Cream of tartar helps to break down the proteins in the whites allowing, for one thing, higher volume when beating egg whites.

I've made IMBC where it is in the ingredients and where it is omitted. Both taste delicious(for the most part). Both had great results(for the most part). One recipe I tried that included C O T...um...was good...just the amount was too high and I could detect it in there....just an acidic aftertaste which was noticeable against the butter and vanilla.

Sad but true...as usual I was behind in baking something up so I asked hubby to help me out and measure out all the ingredients for me.

I'm putting the recipe together and I come across a measuring spoon with a white cream in it...sure enough, when I ask what it is he says uhhh...tartar sauce/cream of tartar, feelin' all proud of himself that he caught me on something he thought I didn't know about baking! I killed myself laughing.

Poor guy...he's such an amazing help and support when it comes to baking and cakes but I just can't let him live this one down!

I am from Texas but I am current living in West Virginia. Back home on Friday nights in the summer we always eat fried catfish, so once we moved here I went to WalMart to buy catfish nuggets. The man at the fish market place told to look in the pet department!?!?! icon_confused.gif He said that he has never heard of catfish!

I have yet to find the big bag of cheap catfish nuggets, but I can go to kroger and buy some crazy expensive filets.

Now we eat pepperoni rolls on fridays. icon_lol.gif

That is too funny, and I once lived in W.V. so I totally understand.

I thought I had seen it as a McCormick's spice before which is why I looked there, but when Harris Teeter didn't have it there I was confused. I thought they had everything. Guess I'll try Food Lion.

I found it in the tall, glass, green-lidded mccormick bottle at HT and FL here.

At WM supercenter, they had the tall glass bottle, the short red-lidded plastic one like above as well as a walmart brand.

Lemon juice should get you the same results as C O T
