I was pretty stumped when I had to do one, too. I ended up carving the cake in the shape of the team's logo and using fondant to piece together the image of the logo. You can look in my pics if you want to see it for inspiration.

Hum maybe a sheet cake with 3d goalies, hockey players that have the same color shirts as the team, hockey sticks etc. Basically make an ice hockey rink.
