Fondant Iced Sponge Cake Shelf Life?

Hello ev1

I am new to cake making and decorating. I am making a 21st birthday cake for 8th Jan. Can I make it and cover it with fondant icing now?
I have a chiller and wondered if it would keep in there until the Birthday?
Or would you advise i make it a day or two before?

I wouldn't. True sponge cake tends to be dry. You could bake it and freeze it now. When you thaw the cake, it would probably need some simple syrup to re-moisten it. Then cover it with fondant. I still wouldn't do it more than a day or two head.

Others may have different advice.

I will take your advice, as I am a newbie at this and would hate to give someone a cake which is mouldy on the inside icon_surprised.gif
I have just practised my first "Handbag" cake and I am quite pleased with the results. I will now attempt some cosmetics to go with it.

Are you in the UK? If you are up to a week is ok. As soon as the cake is cool fill it. I would advise using a moist filling such as buttercream. Cover with a thin layer of buttercream then cover with fondant. As long as the cake is covered the air cannot get to it to turn it stale and in our climbate it is ok for a week.
