
I'm hosting a New Year's Eve/ Birthday Party. My bestfriends hubby is celebrating his bday. So of course I'm making him a cake. He loves lemon cake & lemon icing... I don't have a recipe for one. Does anyone have a lemon cake/icing recipe? I'd appreciate it soooo much!! Thanks in advance~ Thanks,~TC~

While I have nothing "homemade", I have some recipes.
I use a lemon cake mix, Betty Crocker. I have made it the way stated on the box. I have made it with lemon yogurt instead of the ingredients listed on the box.(Just mix in enough yogurt until its cake batter consistency)
I have made lemon cream cheese frosting and a lemon buttercream. I sub out lemon extract for any of the extract that is called for.
If you need any more specific, don't hesitate to ask. I love talking about lemon(its my favorite)!

The best lemon cake I've ever had in my life is one I made when I was out of lemon cake mix. It's now one of my most-requested cakes.
I start with a white DH cake mix, add whatever the box calls for PLUS one extra egg (I use all the yolks, too), one box of instant lemon pudding, and a teaspoon of lemon extract. It is so moist and lemony, and the best part is that there is no nasty tell-tale fake yellow color to the cake like a regular boxed lemon cake mix. The color is very natural, and it is both fragrant and yummy.
For the icing, I make a standard buttercream but I add about half a package of sugar-free Kool-Aid brand lemonade mix. It really imparts a lemony zing to the icing, and people LOVE LOVE LOVE it.

I too dr. up a lemon cake mix, but for the filling I just use lemon pie filling (canned or homemade) for the canned, use about 1/3 to 1/2 of the can for the filling and then take the remaining and mix with an 8 ounce container of cool whip. Use that lemon filling/cool whip to frost the cake with. This is one of the most popular cakes I sell in the summertime.


I use this recipe but substitute Lemon Extract for the Vanilla. (usually I add a little extra..I love Lemon.)
I like to do it in a bunt pan and make a lemon glaze with powdered sugar and lemon juice. It it is too strong you can add a little water. It is really delicious!

Me too, that is why I like that lemon pie filling (I have also used lemon curd) for the filling of the cake - very tart - good contrast to the cake and the cool whip/lemon frosting.

I use Toba Garrett's lemon coconut cake with 3 layers of lemon curd filling, plus I added a layer of baked meringue between the layers, and it was an absolute conFECTion--just like lemon meringue pie, in a cake!
There is a Lemon Lust cake recipe in the Cake Book (probably pictured here somewhere) that looks wonderful too.


Post note on the Lemon Lust cake. I made it, and it turned out great, but the cake by itself is not as lemony as I'd expected. With lemon syrup, filling, and frosting it will be great, but I like more zing to the actual cake so would add some more lemon extract rather than just lemon juice next time.

Hi! Just found this thread and wanted to share my moms lemon cake recipe. I make it often b.c it's so quick. This cake is very yellow and very lemony. Hope those who try it enjoy.
DH Lemon Supreme Cake Mix
1 Cup Hot Water
1 Lg Box Lemon Jello
4 Eggs
3/4 Cup Oil
1 tsp Lemon Extract
Glaze
1/4 cup lemon juice
1 1/2 cup powdered sugar
Disolve Jello in the cup of hot water & cool a little. Mix the remaining ingredients then add the jello mixture. Bake in sprayed bundt pan at 350 for appx 45 min or until done.
Now this is where I change things from the original recipe. I make 2 batches of the glaze...you really don't need 2 full batches, but you need more than 1. The first batch I warm in the microwave until the glaze is very thin (will be almost clear). I poke holes in the 'bottom' of the cake (it's warm/still in the pan) and pour over the bottom. Flip the cake out then use the 2nd batch to glaze the outside.
This cake is super moist. You can make it 'heavier' by using lemon pudding..this is also great in mini muffin pans (I'm told they are similar to lemon blossoms but I haven't checked out that recipe). I apologize if this recipe is already posted.
