What Icing Works Best On Ice-Cream Cakes?

I have to ice an ice-cream cake with a yellow smiley face. This is a grooms cake. What icing works best with ice-cream?

Can't you just use chilled ice cream or is the cake not going to be refrigerated?

I use the frozen cool whip (the small tub) and add 1/8 C (or little more till I like the consistancy) powdered sugar and 1/2 tsp vanilla. I like the flavor and i find that it works well. People like the taste since it tastes liked whipped cream. I found this out on baking 911. I have read other places to piping gel in it as well, but I have found no reason to use it.

The cake itself is being made by the groom's mother. They told me it will need be frozen . I have never made an ice-cream cake and am not sure what chilled ice-cream is.

I've read that a lot of people will decorate ice cream cakes with Rich's Bettercreme.

I've used softened ice cream to frost with. Not very easy to decorate, though. And, there is a lot of freezing in between times to keep it frozen. I suggest Pastry Pride. It's a whipped topping that you can find at Smart and Final. From what I read, it sounds the same as Rich's Bettercream. HTH.

I'm with Tkeys the Richs Bettercreme...................or whatever it's called.

I think that buttercream would work too, I've frozen complete decorated cakes and they taste good even when they're still frozen.

pastry pride is what is commonly used on ice cream cakes it frezzes well and is not to sweet complements the ice cream cake very well icon_wink.gif and you can also use softened ice cream but it is very hard to frost with and very messy.

I just delivered my first ice cream cake today! I used the Wilton Whipped Topping recipe, and it tasted nice. Not too sweet where it would "compete" with the ice cream and cake. It was also easy to use for decorating. I didn't color it but I don't see why that wouldn't work.

I did keep sticking it back in the freezer because I was afraid of melting.

I didn't have any problem. Good luck!

Hi I know this post was a while ago but do you have the recipe for the Wilton Wipped topping or know where I can get it?

Hi Michelle!

I was just looking through my Wilton books, and I think this is what you're looking for:

Stabilized Whipped Cream Icing

1/2 pint (1 cup) heavy whipping cream
2 tbsps confectioners sugar
2 tbsps piping gel
1/2 tsp clear vanilla extract

Combine whipping cream and sugar in mixing bouwl. Whip to soft peak stage. Add piping gel and vanilla, then continue to whip until stiff peaks form. Do not overbeat. Makes 1 1/2 to 2 cups.

As an alternative, you can use frozen non-dairy whipped topping or packaged topping mix. Thaw frozen whipped topping in refrigerator before coloring or using for decorating. Use packaged topping mix immediately after preparing. Do not allow either to stay at room temperature as it becomes too soft for decorating. Store decorated cake in refrigerator until ready to serve. I hope you find this helpful.

In my supermarket they only sell heavy cream is this the same thing as heavy whipping cream.
