Help!!! Nut Replacement In Recipes!?

I just found out that my MIL LOVES fruit cake, (and mine is really good) so I wanted to surprise her this weekend with some, but I just realized, she has diverticulitis and can't have ANY nuts! My recipe calls for almonds, walnuts, and pecans... (good Lord, no wonder this recipe is SO expensive!) What would you use as filler for those? Would you just use more dried fruit? Do you think that would harm the consistency of the cake? I really want to make it, as I think she would be thrilled, and who DOESN'T need more MIL points? icon_wink.gif TIA for any helpful suggestions!

You'd probably be ok just leaving them out and making the recipe as you normally would!

I understand the mil thing-I have one that is super and the step-mil is a pia! icon_lol.gif

What about coconut? I don't believe it's a nut like almonds, walnuts, and pecans.
And if not, I would say leave them out.

you know, I have a Jane Brody cookbook that has a 4 fruit quick bread and it has been a HIT Every time I make it (lots of recipes handed out). Anyway, besides the fruit, it calls for grape nut cereal! it really does provide a nutty flavor and some "crunch" without the real nuts being there. They do soften up, obviously, but they give a nice texture.

if you don't want to do that, then just skip the nuts, but it would lose a lot.... I would then maybe add some almond extract to give more flavor though.

I love fruit cake too! I'd say if MIL loves fruitcake....replace the nuts with the dried fruit that she likes best! HAPPY BAKING and MERRY CHRISTMAS!

Ok, I wasn't getting updates on this, so I apologize!! Anyway, I have my fruit saoking in dark rum right now and I am going to bake today. I ended up replacing the nuts with a few more cherries, some dried peaches, and dried apricots. That will make it all the fruitier!! I will have to let everyone know how it turns out!! I am guessing you can't go wrong with peaches and apricots!! YUM!
