1) I now have a green half circle on my granite counter from my first attempts at using Wilton color mist. I'm still in shock that it stained. I mean - I've dripped permanent hair dye - BLACK at that - on the same granite that's in my bathroom and it didn't stain it!! Geez...
2) Would using an airbrush system help in not getting the overspray everywhere?
try some soft scrub with bleach, my mother swears by it lol
when i airbrush i cover everything just in case of the overspray

I use Clorox all purpose bleach spray to get dye off my counter. Maybe it will help.
Have you tried the Mr. Clean Magic Eraser? I had red hair dye stain my floor, and 3 months later bought the one in the pink package and it came right off.

And for overspray, I am learning it is best to get boxes from the grocery store and cut down a side flat. Put you cake in and it acts as a "painting cabinet".... then just put it in the recycling.... saves a lot of messy.

I have an all white kitchen, yuck! Everything shows, and my all clad pans scratch everything they touch. The sink, the counters, everything!
Someone told me about this stuff called "Barkeeperes Friend" You can get it at Wal-Mart, its about 2 bucks a can, like a can of comet. Its also in the cleaning isle.
You make a paste out of it, with just some water, and just rub whatever you are trying to clean. It has gotten out stains and marks on my counters that I thought I would have to live with forever!
It worked great when my daughter "fingerpainted" in my "red" gel paste coloring on my counter. The counter looks as good as new. Her fingers? Not so much. Cant will them all I guess.

Oh my niece did that same thing to me last month. My brand new handcrafted kitchen table and my great grandmas china cabinet looked like a caveman painting. I cried for a day!
It also takes off all the nasty stuff that residues on the bottom of pots and pans after a lot of use.
When I was younger I worked for McDonald's; we used to take the pans home and put them in our self-cleaning ovens, they came out looking brand new!!!!!! I may have to buy some of that stuff since my oven is no longer self-cleaning. 
If you have granite countertops that havent been sealed properly their is a good chance they will stain. If you have a stain that wont come off with reg. soap and water then use a special cleanser designed for granite/stone. DO NOT use any cleansers that contain bleach or scrubs that contain abrasives and or chemical's. That includes soft scrub also. By using thes they could interact with the stone itself causing more damage. Look for a cleanser/stain remover specifically designed for granite and stone.
That spray color creates a big area of over-spray every time I've used it. The first time it happened, I cleaned red off every nearby surface. Lesson learned!
So I found a giant cardboard box (24x24x24) that I now use as a "color spray booth." I left the box completely intact except I cut straight down halfway on two corners on the same side. This allows me to fold the "top" back to let light in when the box is on its side. The remaining 3 flaps are extended making it 36" front to back. Newspaper goes inside to catch most of the over-spray. The cake sits inside the box on a turntable, and then it's time to spin and spray. No muss, no fuss.
The box folds flat to tuck away behind a bookcase when I am not using it.

We were told this also when they installed my sisters countertops...absolutely nothing abrasive...especially if there is a finish. Will take the shine right off AND cause scratching which can't be corrected unless buffed out with a special stone and then retreated. Which could cost as much as 6 ft. of granite 
.
Well anywho I really hope you have luck getting this stuff out. Anytime I mix colored fondant or spray anything I have a LARGE piece of vinyl that I cover my island with (where I do my spraying) and kneading. So none of the color can penetrate my faux granite looking countertops. The vinyl costs about 1.00 a yard and it is the best stuff to roll out anything on AND keep colors off!

I can't help you with your stained counter top, ouch. But!!! Fashion a spray box, use a large cardboard box, set your cake inside it so the only part open is where you are standing, ie the front. I do my spraying, in a box I had made just for this, outside (we have an enclosed patio area). (Wear a face mask, too. You'll breath in all the overspray and have color in the nose, mouth, on the eyebrows and all points available, if you're not really careful.)
Baking soda will work on stains also. Don't know that I would use it on granite but but for other surfaces it works great also on pots and pans! If you put some in your dishwater and wash glasses or crystal they will come out sparking! Tip from my grandmother.
I have granite counters. We had just moved into the house less than a year and one of my in-laws did me the favor of cleaning without my consent and wiped my island, left it pretty wet and set my rattan basket decoration on top. Well, that pretty rattan basket's orange/red dye seeped right on in and I didn't see it until it was good and set. I can't tell you how much I wanted to cry and then beat the living blankety blank blank out of her! lol
I took some Oxiclean and made a paste (semi-wet) and placed it on top of the stain. I had to remoisten it and reapply for a few days, but that ugly stain was gone!!

i know you are all going to think I am crazy...but this works...
I had left a hot pink post it note on my granite bathroom counter...counter got wet...pink bled on counter and left huge stain!...BIG MESS......so I tried the Scrubbing Bubbles Bathroom Tub and Tile Cleaner (after trying Soft Scrub and then bleach--to no avail)....sprayed it on and let it sit for like 10 minutes and it came right off!!!
Now with it being in the kitchen you may want to rewash with soap and water afterwards just to make sure its really really clean...but the Scrubbing Bubbles is NOT abrasive and if it took hot pink out of a cream counter, then I'm convinced
