I usually use the Wilton recipe for Buttercream icing but wanted to know if anyone has a large batch version/recipe? I have been doing more Wedding cakes and have the large model Kitchen Aid mixer so I can make multiple batches but have yet to find a recipe. I know i can always doble or triple the recipes but that seems like alot. Let me know if anyone has any ideas.

I have a 5 qt kitchenaid mixer (Artisan), and can easily make a buttercream batch containing 4lbs of powdered sugar to 24 oz Alpine (approximately 3 1/2 cups). The key is to use the pouring shield or a towel to cover the mixer and add a little powdered sugar at at time. I have no problems making this in my mixer.
