1 gal punch (I use Sunny-D red or yellow as a base)
1/2 quart pineapple sherbert
1 12-oz can 7-Up
1 12-oz can frozen pineapple juice
1 small container frozen strawberries
The frozen items act as 'ice' to keep the punch cold. The sherbet also helps keep it cold and adds a thickness to the punch, so it doesn't taste like colored water.
Figure about 20 servings per gallon, depending on the size of the cup.

If you like a coconut, pina colada taste:
1 64 oz. can pineapple juice
1 can Coco Lopez coconut mix (usually found with alcoholic drink mixers - in a blue can)
1 quart pineapple sherbet
1 liter club soda
Coconut Rum (optional)
Mix pineapple juice and Coco Lopez together, pour into gallon ziploc bag and freeze flat.
Approximately 2 hours before event, place frozen mixture and sherbet into punch bowl and add club soda.
Mix occasionally until all ingredients melted to desired consistency.
Add coconut rum if desired.
I used approximately 6 batches of this for my wedding (125-150 guests), and everyone loved it! Also, you should be able to fit 2 batches into one punch bowl.

I love this punch...it uses Jello gelatin, and can be made using almost any flavor, depending on the color you want to achieve...it's easy, quick, can be made ahead and frozen, and if you don't use it all, put it back into the freezer for another time!
Jello Fruit Punch
Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
3 1/2 cups sugar
1 large Strawberry Jello (or any flavor you want)
1 8 oz. bottle Real Lemon lemon juice
2 large cans Pineapple juice
14 cups water
Boil 4 cups water. Dissolve sugar & Jello in water.
Use 2 clean plastic milk jugs. Pour 1/2 mixture into each jug. Add 4 oz. (half the bottle) lemon juice to each jug. Put 1 can Pineapple juice into each jug. Divide remaining water between 2 jugs. Shake well and freeze or serve over ice ring. Take out of freezer at least 2 hours before serving. (May want to take out 3 hours in advance...if it melts too fast, just put into refrigerator for last hour.)
Yield: 2 gallons
