Sorry if this is the wrong category. Mods please move to wherever is more appropriate.

Does anyone know if you can freeze brie? I really love doing a baked brie in puff pastry with a brown sugar pecan glaze. But I hate the white rind of the brie. To me it tastes like those wax lips you can get at halloween.

I was thinking that I could freeze the brie (at least partially) and trim off most of the white rind. Then bake as usual.

Comments? Suggestions?

I have often wondered about that, I've seen baked Brie on cooking shows and I have eaten some at homes, but I never eat the rind. That just doesn't appeal to me, here you have all this wonderful gooey brown sugar and nuts, creamy warm cheese and this leathery rind. I will be checking back on this thread to see what others suggest to you.

Brie is one of my favorite cheeses. I don't think it would be a good candidate for freezing because of the high cream ratio it has. Maybe you could just BRIEFLY put it in the freezer to make it easier to trim. I would NOT freeze it completely though. (I am the odd ball, I even love the rind!)
