I started off getting the 3" pans but I recently changed to 2"
My reason was because although I only baked 1 cake when I did the 3", I had to torte them into 3 layers and with the 2" pans I baked 2 cakes and each was divided into 2 layers making 4 in all (taller cake) than the 3" and they look better IMHO. I think I am going to buy all 2" from now on.
Good topic..I am interested to hear what others more experienced than me use...

Two inch is the overall answer I got. I've used both, and prefer the 2" .

I asked this question last month and the 2" pans were what I got the most positive feedback on. Now I've got a whole collection of 2" pans and I love them.

I have some of both, and it takes more time baking the 3" and I'm always worried the center won't be done, even with a core or a flower nail, so I'm more likely to use my 2" pans. Janice
