Urgent! Can I Use Cream Of Tartar Instead????

I am all out of MP and would like to know if I can use Cream of Tarter instead and still get good results. I only have need for a small amount of RI and really don't want to go to Michaels. icon_mad.gificon_cry.gif

Meringue powder is typcially egg whites, cream of tartar and sometime sugar and a couple of other minimal ingredients.

Egg whites with cream of tartar (1/4 - 1/2 tsp) will work fine.

I use MP and Cream of Tartar. But the CoT makes it harden. So, I'm not sure if that would work. Sorry I couldn't be of more help. Good Luck!

I'm assuming MP = meringue powder, and RI = royal icing?

The answer is no. Cream of tartar is no substitute for either one of those. Cream of tartar is added to eggwhites as a stabilizer.

Ok, what if I make the RI without MP? Will it result in a catastrophe?

You can use egg whites with a touch of cream of tartar and powdered sugar.

People use MP in place of egg white because of the fear of salmonella. EEK! I use MP because it's more convenient for me, but I've got no fear about getting anyone sick and would use plain whites if I had to.
