I have had poppy seeds in a sealed jar for 2 years. It has never been opened. Would they be okay to use

I think the only way you can tell is to open them and taste them yourself, or at least smell them. I keep my jar of Poppy seeds and sesame seeds in their jars in the freezer.

I believe they should be fine, but as Shirley said, taste them first!!

seeds like nuts will go rancid if not kept in the cold. It has to do with the fat content. I'm not sure, but they may be OK if it was vacuum sealed. Just give them a try and you'll know for sure. I know I kept sesame seeds too long, unopened, and they got buggy.

Yes, they definitely go rancid.
