I love divinity and pecans are my favorite baking nut, over walnuts or almonds. I toast the nuts in a pan in the oven and then let them cool before adding to a recipe, it brings out the flavor in the nuts. Just watch them closely, nothing worse than the taste of burned pecans.
Here is a recipe for 'No Fail" divinity made with marshmallow cream. I have not tried it but it sure sounds easy to make and I imagine very creamy.

My son loves divinity so I decided to make him some.
Well....the recipe said to 'beat it until it looses it's sheen" which I did and almost burned up my KA.
It was so hot I couldn't even touch it!
This year I will not beat it that much.
But, I also know I cannot beat RI as long as most recipes say or it is so hard I can't use it.
May have something to do with humidity differences of people writing/making the recipe???
