Overmixing/undermixing Batter?

Hi,

a very simple question icon_redface.gif , how does one know if they have overmixed or undermixed a batter?

I just bought a large stand mixer 6.7litre and was previously using a handheld mixer. I understand that with more powerful mixers, one must be carefull not to overmix. Is there any indication when the batter is overmixed?

I read that some people always finish off by hand. That is, when mixing the flour, liquid, flour, liquid, flour, they mix by hand and don't use the mixer for this.

Appreciate if anyone could share with me their experiences.

I just bought a Kichen Aid mixer about 3 months ago. I am a very impatient baker lol. I mix the dry and the wet then throw them in there together while they mix I do something else and when "it looks mixed" im done. I have never under or over mixed I dont think. lol Happy mixing crouton800

I guess it'd depend on what you're mixing .. for cake mixes, I'd say mix after everything has incorporated in your bowl and you've scraped the sides/bottom, mix for another 2 minutes ..

for icing, if buttercream, do the same as the cake, scrape the sides/bottom and then mix again for probably 2-3 minutes or until it appears smooth.

I mix until everything is just mixed up, and maybe a little less, and just mix the last two bits by hand. Of course it does depend on the recipe, but you want to avoid overmixing.

I do the same as Sugar. Mix until it's just barely combined and then mix the last few strokes by hand.
