I was just wondering how I can prevent the middle of my cakes rising like a big dome in the middle?

I use the wilton bake even strips. They help alittle but I usually still need to level my cakes a little. I also don't measure the amount of batter I put in the pan. I'm bad. I hope this can help you.

Yes, I agree, even with the bake even strips there is sometimes a small mound that has to be trimmed so your cake top is level. Don't know of any way to eliminate that completely. I don't measure batter either, so I'm bad too!

Most of us sort of welcome those mounds to be trimmed off, they go into our "cake ball" scrap supply.

Thank you both. I have actually ordered the bake even strips from CC but it will take a while for them to get to me. I love using the scrap idea for cake balls veejaytx.

Just another quick question from an amateur. When you cut and level the top would the BC icing not be filled with crumbs?

Hi maryak

when i level my cakes i acually turn it over so that the bottom becomes the top there for you have a good surface to ice your cake...

You can try baking your cakes at a lower temperature. I've found the cakes rise much less when baked at 315. And I do the same thing that Kylie does when icing the cake.

maryak - I was actually just about to post the same question icon_razz.gif I get the mound every time too.

When I do a crumb coat, though, I don't get crumbs in my final icing.

I would level it and then turn it over other wise it will split right in half. So level it and you can always make cake balls out of the extra. As for the crumb coat just icing it when it cools let it sit till when you touch it, it doesnt move with your finger and then icing it again but make sure the first coat is a very thin layer.
