This is the only recipe I've ever tried, it came highly recommended from a friend and everybody who has tasted it loved it!

I do use parchment paper to bake it on (coated with pan grease) and I use granulated sugar instead of confectioner's sugar to sprinkle on the linen towel before rolling the cake. I've been warned not to use a terrycloth towel, as the cake is more likely to stick to that.


EASY PUMPKIN ROLL

INGREDIENTS:
3/4 cup all-purpose flour
1 cup white sugar
1 teaspoon baking soda
2 teaspoons pumpkin pie spice
1 cup pumpkin puree
3 eggs
1 teaspoon lemon juice
2 tablespoons confectioners' sugar

1 (8 ounce) package cream cheese, softened
1/4 cup butter
1 teaspoon vanilla extract
1 cup confectioners' sugar

DIRECTIONS:
Preheat oven to 375 degrees F (190 degrees C). Grease and flour a 9x13 inch jelly roll pan or cookie sheet.
In a large bowl, mix together flour, sugar, baking soda, and pumpkin pie spice. Stir in pumpkin puree, eggs, and lemon juice. Pour mixture into prepared pan. Spread the mixture evenly.
Bake at 375 degrees F (190 degrees C) for 15 minutes.
Lay a damp linen towel on the counter, sprinkle it with confectioner's sugar, and turn the cake onto the towel. Carefully roll the towel up (lengthwise) with the cake in it. Place the cake-in-towel on a cooling rack and let it cool for 20 minutes.

Make the icing: In a medium bowl, blend cream cheese, butter, vanilla, and sugar with a wooden spoon or electric mixer.

When the cake has cooled 20 minutes, unroll it and spread icing onto it. Immediately re-roll (not in the towel this time), and wrap it with plastic wrap. Keep the cake refrigerated or freeze it for up to 2 weeks in aluminum foil. Cut the cake in slices just before serving.

It helps to keep the cake from sticking to the towel. At least that's what I was told, and I didn't want to risk messing it up, so I just did it! icon_biggrin.gif

Will do thanks, I was just wondering why that sugar over powdered? Is there a difference or do they both do the same thing and it's just preference...................I will post. Thanks

I LOVE this dessert! I usually make 3 rolls at a time cuz the small can of pumpkin makes that QTY. I use a cookie sheet and line it with foil then spray with a nonstick spray. I do use powdered sugar on a cotton kitchen towel. A friend of mine has made this and he used the foil liner to roll it up in instead of the towel, he said it worked out great. I'm afraid to try it.

This will be my first year in 10 that I WON'T eat pumpkin roll. I've decided to learn to eat right, and waaaah pumpkin roll isn't on my food list, but that's okay I'll have a yummy caramel protein bar.

Anyway you will love making, eating & sharing pumpkin roll.

I think by white sugar it refers to the regular sugar...

Oh I was just wondering cause everyone I know says they use the powdered sugar.................thanks again I just wondered if there was a reason why some would do the other? Everyone is different.

I love pumpkin rolls. I ate a whole one the other day. I better not do that again. I used conf. sugar to roll it up, and that worked fine.

Ok ladies I made 32 of these yesterday icon_surprised.gif and have to do 23 more tomorrow for orders on Monday . Oh and 41 nut rolls too. The pumpkin roll turned out GREAT. In case you were wondering my daughters a teacher and did a fund raiser at school. icon_biggrin.gif

I was just wondering how to make a pumpkin roll also, so thanks for all of the posts! My fiance has been begging me to make a pumpkin roll but I never did it before! Quelinda, you said that you make 3 from a small can? I have a 30oz. can of pumpkin stuff, how many do you think that will make?
