Betty Crocker Cake Mix - Not Enough

I am taking the Wilton I decorating class and I have to take a cake tonight to class - so I decided not to get fancy and just bake your basic white cake. I used Betty Crocker and I decided to actually measure the batter into the pans. I am making an 8" cake, so I need 3 cups of batter (according to Wilton Chart) per pan. Guess what I did not have enough batter with one cake mix, I found that quite interesting. How many times have we eyeballed and thought it was the right amount!!!!

I usually use Duncan Hines but have never actually measured. I usually try to fill closer to 2/3rds full and then I can always level it off if I need to. That is interesting that you actually measured and it wasn't right!!

my instructor in our class 1 course told us it usually takes 1 1/2 cake box batches to fill your most usual cake pans, and sometimes 2 for your character pans. Interesting how they aren't quite enough to use and most my *homemade recipes* are too much! So I always add a few cupcake holders to my cupcake pans and have *little cakes* for my kids who can't seem to leave my * big* cakes alone! icon_rolleyes.gif

I agree with the 1 1/2 boxes- I always have to pop open a second box if I don;t make my own...

I just thought it very curious because they have different size pans to use on back of box and yet if you really measure out the batter, one box is not enough for even the 8" cake.

2 things you can do. 1. Use the cake mix extender recipe and it will be just right for 2 8 inch cakes or just add 1 box of jiffy cake mix and follw the directions on the box. Works well too.

I always use way more than the box calls for. But I also extend the box mixes, which almost doubles the amount of batter. Then I don't have to make two mixes!

I think it was a Duncan Hines cake mix that I used the last two times when making the Cinderella Character pan and it was enough. I used only one cake mix like the directions said. I sometimes use Betty Crocker too. Whichever is on sale at the time.

On most of my pans and readings it says the basic box mix will make 4 cups of batter and the box even says it makes 4 cups doesn't it? Well I had to measure out 11 cups of batter for my sheet cake one day and I noticed the bowl I was mixing in is a very large measuring cup 12 cup I believe, and I mixed up one box mix scraped down the bowl and mixed by hand for a moment and checked the side and it was just below the 4 cup mark. Maybe it varies with different cake mixes. You've made me question alot of cakes now lol I'll be measureing from now on.

I also usually use the cake extender recipe, but since this was for class I was going to just do the basic cake recipe on box, thought It would be a cheaper route to go!! I will have to look on the box and see if it says how many cups it makes!!! Thank you guys for all of your input, I hope this helps someone in the future.

I use Betty Crocker all the time, following the directions on back and I use 1 mix per 8" pan with a little left over for a couple cupcakes. My pan gets overfull but I would rather that than have it too short, I level it right in the pan so I have a perfect 2" cake. I use 1.5 mixes for a 10", 2 for a 12" or 9x13 and half a mix for a 6".
The directions on the back of mixes for pan sizes are for people who are just making a cake they're going to slap frosting on, they don't care how tall the sides are like we do. icon_lol.gif

I always have enough. I always split 1 box mix between 2 8" x 2" pans and they turn out fine.

Box mixes usually yield between 5-6 cups of batter in Canada, but I cna't see there being much of a difference.

Me too. 1 box = two 8" cake pans. I use the Magic Strips, grease only (no flour) and the cakes usually rise higher than the pan.
