How Do You Mix Your Sugar Cookie Dough? By Hand Or Mixer?

I know this may sound like a really dumb question, but was wondering about this. If you use a recipe like the NFSC dough, do you mix this in your kitchenaid mixer or by hand? If it is in the mixer, do you use a dough hook or the paddle? The last batch I made of dough, the mixer sounded really, really bogged down by it. I stopped it and just kind of folded in the rest of the flour by hand.

I have the classic kitchen aid mixer, btw. Would dough like this be too much for it?

I am curious about this as well. I have used my Kitchen-Aid mixer with success- I think I used the paddle first and then changed to the hook, but I would love to know what the "professional's" use!

I am so looking forward to my holiday cookie baking/decorating fest!

I am by no means professional, but i use my KA Artisan and pro 6. I actually prefer the 6 because it is a more powerful mixer and the bowl is a little bigger.

I still wish I could double it.

I use my KA to mix the dough (NFSC), and it handles it with no problems, BUT I only do a half batch at a time. I tried doing a whole batch once, and the mixer bowl was so full it seemed to take forever for the flour to get mixed in well, and stuff was falling over the sides of the bowl.

It takes a bit longer to do two separate half-batches, but is much less stressful for me, LOL!

I have the 4.5 qt mixer, but it's not the classic one, I think it's called the Ultra Power (300 watts, I believe).

EDIT: Forgot to add, I use only the paddle attachment. I use up to speed 4 for doing the butter and sugar, then the eggs. After I add the flour, I use speed 1 only until the dough comes together.

I use my kitchen aide, but like others, I do 1/2 of the recipe at a time.

I use my KA pro 5 qt. I mix the whole recipe.

I have a handheld mixer and I do half of the recipe with no problem. I also use regular beaters for it.

I use a hand mixer and just do half a recipe. I also let my margarine sit out and soften up a bit first.

I've made it by hand and by mixer. I guess it depends on what mood I'm in! I have a KA 600 Professional and it does a great job with a double recipe!

I have one of the very first mixers made that I inherited from my grama. It's not a KA, cant remember the brand name.... But I use it for my sugar cookies. But when it gets real thick i finish mixing by hand. It doesnt even have a paddle attachment.. It has the regular beaters and bread dough beaters.. (told you it's OLD) LOL It works great until that last part.. Im terrified of burning it out so when it starts moving slowly I stop and just finish by hand. Works great for me

Hi: I have a 6 qt. Kitchen Aid and I just made a batch of cookies. I had no problem making the whole batch with my KA. No problems at all with the mixer or the recipe. I had a great time and got good reactions about the cookies.....Vicki 0052.

Thank you so much for answering everyone. I wasn't sure if I was doing it right in the KA or not. In a way I wasn't sure if it would "overmix" in the mixer or not. (if that makes any sense, I know) I always read recipes that say do not overmix, etc, and for some reason in the back of my mind I thought it could be the case here. Even though you reroll the dough a bunch of times icon_rolleyes.gif , it just made me question myself. icon_redface.gif

I always mix mine by the mixer( i have an kitchenaid) because its so much faster and it doesnt hurt ur hands as much too
