Can White & Brown Sugar Be Interchanged?

I was wondering if I ran out of Brown sugar can I use Whte suga? And if so, how much? I'm sure not equal amouts! ANd vise - versa, can i put brown sugar in where it calls for white sugar??

I always wondered if this could be done, maybe now I will know the answer.

I think it depends if it's light brown sugar or dark brown sugar.

If it's light brown sugar, I think you can substitute one for the other in equal amounts.

However, I wouldn't think it would work with dark brown sugar.

Brown sugar has the addition of molasses or dark corn syrup added which makes a more chewy texture. White sugar would make something more crispy. I like to play with recipes a little and add or subtract a portion of one or the other, but would not really interchange them. I guess it would depend on what you are baking.

I have always heard that they are interchangeable, you can switch a cup of packed brown for a cup of granulated, with no problems. If you wanted a chewier cookie though it won't have that. I have done it before with just fine results.

There is more moisture in brown sugar so a recipe may not come out right if you try subbing white for brown.

If you are really worried about it and you have some molasses around a couple of table spoons in your cookie may help, or even a couple tablespoons of corn syrup. That should add in some moisture, but the only way to know is to just try it.

Thanks everyone, I'm making cookies later today so I think I might interchange some brown sugar in the white. I love brown sugars, carmelly, taste icon_twisted.gif (if that is such a thing) . I hope they come out yummy!!!!
