
Another cry for help from the king of baking at the last minute...
i'm making a batch of Spicy Oatmeal Raisin cookies. i made a batch earlier in the week according to recipe and they were delicious! but the kids didn't like them 'cause of the raisins.
so for school tomorrow i'm making more without the raisins. but there are 3 kids in class who can't have milk. so instead of making something completely different for them, i was wondering if i could substitute all butter flavored crisco instead of 1/2 butter 1/2 crisco.
i looked on the crisco website and it didn't say that milk was any part of the butter flavored crisco. just these lovely indredients: PARTIALLY HYDROGENATED SOYBEAN AND COTTONSEED OILS, MONO- AND DIGLYCERIDES. ARTIFICIAL BUTTER FLAVOR, AND BETA-CAROTENE (PRO VITAMIN A) ADDED FOR COLOR.
so with no real butter in the cookies, they should be ok for the milk allergic. but will they be ok taste d'ya think? i'd make a test batch but i only have 1 box of oatmeal & the wife has the car today... can't get more.

i just called crisco & they said that it is milk allergen free. but i have to add 1 tbsp of water to the 1/2 cup of crisco that is replacing the butter because crisco has no water in it.
now here's hoping that they taste as good as the batch i made on monday with the butter.

the cookies came out ok. my wife & kids say great, i say, eh. the dough tasted like something pumped out of a well. but it got better with baking. it's edible and if you eat it without eating one of the "real" ones in comparison it's tasty.
it's nice to know that i can sub butter crisco for butter and still have it come out worth eating. so whenever i am easily able to sub, i can make a small batch for the allergic kids.
now i'm sitting here with about 7 dozen cookies all told, and my 4yo has misbehaved all week at school and her punishment is that she can't bring in a special treat this week. i can still send about 2 doz with the 2yo, but aww darn, that leaves me with 5 dozen cookies that i just don't know what to do with.

I don't want to be the bearer of bad news, but. My best friend has a boy who is severly allergic to milk. The crisco has artificial butter flavor, he can't have that. you might want to make sure it's ok before you give it to kids. granted there are degrees for any allergy. example, I'm allergic to tomatos. ieat them all the time. My firend's boy, ate something with calcium carbonate ( milk derived) ended up in the hospital. My hopes are the cookies are fine. That's great & wonderful of you to redo your recipe for these children.

well, the 3 kids with the milk allergies all ate the crisco cookies today. two only have mild sensitivities, so i wasn't anticipating a problem with them, but one kid uses an epi-pen, which to me means serious allergy (i use one for my allergy to mushrooms).
everybody was ok and loved the cookies. the kids really loved that they got to eat treats with everybody else & felt part of the group. so now that i know it's ok, i'll be doing a lot more recipie doctoring for them.
when i spoke to crisco, they said that early in their processing there is some milk used but it is completely processed out. the representative repeated that even the butter flavor crisco was non-allergenic for people with milk allergies. i don't entirely believe her, since people with the most serious form of milk allergy -- casein allergy -- can't even eat food processed on the same machinery as milk. their rep should really be more careful.
i have no problem dr'ing my recipes to accomodate as long as the results still taste good and i can do it safely. i guess i was just brought up that it was polite to do that... find out what your guests needs were before hand and accomodate them. when i bake for the kids, teachers, & staff, they're my guests and i'm happy to do it.
when the girls started the new school, the first week they brought treats, i got some back. i was so puzzled. when i asked, the teacher said she gave one to every kid and sent the rest home, that i had sent way too much. i told her that the leftovers were for teachers & staff to either eat there or take home. after that, i get no leftovers & i have happy teachers
