
Hi everybody, I"m a beginner at everything with cakes, but have been baking cookies for my son for a while. I finally bought some new Wilton pans and today everthing burned. That is usually my experience with metal cookie sheets. I did the next couple of batches on my Pampered Chef stoneware and using a Silpat and they were fine.
Am I naive to think one can ever bake cookies directly on metal cookie sheets? Should I always plan to use parchment, Silpat, stoneware, etc. ? I thought maybe my old ones were the problem, but these are new and shiny.
The only time I found I really needed metal was to use chilled cookie sheets for using my cookie press. I simply couldn't get the dough to stick to the pan and come out of the press unless I was using metal, preferably chilled.
I now have 2 dozen burned M&M oatmeal cookies.....

Hi Kate, I have a few ? to ask you. Do you have a gas or electric oven? Sometimes ovens vary and gas can tend to get hotter. Did you preheat your oven to the right temp? Always make sure your oven is preheated before putting in cookies. Normal baking temp. for cookies is usually 350 degrees unless your oven runs hot, then if that were the case I would turn it down to at least 325. Did you bake your cookies at the right amount of time required? I usually check my cookies a few minutes before the timer goes off and take them out just as the edges turn a light brown. Cookies will continue to bake on the pan for a few more minutes even after you take them out of oven. Do you use dark colored cookie sheets? I noticed cookies tend to get darker faster on darker colored cookie sheets. I only use heavy weight light colored cookie sheets for baking. If you have darker cookie sheets try to use parchment paper for lining, turn your oven down to 325 and check cookies just before they are done. I always use the heavyweight metal cookie sheets, line with parchment, preheat to right temp. and set timer a few minutes sooner then called for and as soon as the edges are soft golden brown I take them out and let them finish cooking on cookie sheet for 2-3 minutes then transfer to his wire racks. Oh by the way, I dont always use parchment paper and they still turn out fine.


I have made chocolate chip cookies a few times on a few different types of cookie sheets.
1) Cheap-o 3 pack from walmart... cheap.. trash.. only good for french fries
2) Expencive side-less pan from walmart but Wilton Brand... not problems at all...
3) more expencive made by Baker's Secret and another one I can't think of the name right this second but cost me over $25.00 for a set of 2 on ebay.... retailing for over $50.00 for the set... I can't remember...
anyway I have found in many years of doing christmas cookies... darker coated non-stick pans tend to burn cookies quicker so I have to check after about 5 minutes of baking to make sure they aren't burning or turn the temp down some... just like I would with a dark non-stick pan... I think the dark coated pans heat up more... or hotter... not sure but they tend to burn everything I put in/on them lmao
I would suggest maybe trying them again but use your silpat this time as well... I don't have one of them so I have no clue what it is used for or anything like that lmao but it seems if it's working fine with that and the other pans... maybe turn the temp down on the oven or start checking them shortly after putting them in the oven (IF THE WILTON PANS ARE DARK NON-STICK COATED...)
