I have this recipe for rolled pumpkin cookies. I want to frost them with some kind of chocolate glaze. I was thinking poured ganache, but will that set and dry? Anyone have any other ideas? I am looking to have the same effect as royal icing, but with chocolate flavor.

What if you just drizzle melted chocolate chips on them? Or chocolate mmf...or maybe dip them? I would love to now about the Ganache to. Glad you asked.

I just read in Fine LIving Chocolate magazine that if you melt chocolate with shortening, it will dry set.

Also check out Alice Medrich Cocolat, she has some glazes in her book that are supposed to set.....I think you add some corn syrup?

Check out Sherry Yards book "The Secrets of Baking" she has a chocolate glaze recipe in it.

The recipe I posted in the recipe section is Alice Medrich's Sarah Bernhardt Chocolate glaze from her book Cocolat. A fabulous glaze, tastes delicious, but on cookies you wouldn't be able to stack them without marring the glaze or having the cookies stick together.
