
Hi all!!! I am looking for a recipe for a cookie called a TEA COOKIE or just T-COOKIE or maybe even TEA CAKE COOKIE. A friend of mine has had them at a bakery in Nashville, Tn. It's located around 20th-25th and West End Roads.
It's a round, fluffy, very light cookie with some type of icing on top. Maybe a vanilla flavor? I'm getting this info second hand and from a man, so I'm trying my all to give ya'll the best description I can.
Any help would be greatly appreciated!

I have this recipe *somewhere* but I can't seem to find it at the moment. I have called and left a message for my mother to email me her copy. Will post it as soon as I hear back from her!

I don't know the recipe but I have tasted them & they are VERY good!! I bought some in Nashville this past summer at the Loveless Cafe (when I went to a Kenny Chesney concert--yowza!!) They are called "Tennessee T-Cakes." They had a sign up at the Loveless too that said Oprah had them on her show as one of her favorite things. They had a couple of flavors. My favorite was the original. They also had lemon, chocolate & key lime. I tried the lemon & the chocolate, along with the original, but not the key lime. I didn't really like the chocolate at all. It was almost like a not so tasty cookie that was baked in a mini muffin pan & the only chocolate in it was a little truffle like thing in the center. Some people must like them though, or they wouldn't sell them, right? Anyway, they have a web site. It's tntcakes.com. I hope you get to try some soon. They're very yummy!!

I seen this post in Southern Living forum from a lady who bought the cakes and made a recipe that she thought was very similar.
TENNESSEE T-CAKES (COPYCAT)
4 oz butter
1 1/2 cup firmly packed dark brown sugar
1 egg
1 egg yolk
1 1/2 tsp. vanilla
5 oz (1 cup plus 2 tablespoons) all-purpose flour
1/4 tsp salt
Preheat oven to 350 degrees F. Line mini muffin pan with mini muffin paper liners.
Heat the butter and brown sugar in a medium saucepan over medium heat stirring until the sugar has dissolved; cook 1 minute more. Set the pan aside to cool for 10 minutes.
Stir the egg, egg yolk, and vanilla into the cooled mixture. Add the flour and salt, stirring just to blend. Portion the batter into the paper lined muffin cups filling about 3/4 full.
Bake about 15 minutes until the set but not dry.
These were very close in my opinion, you could also try adding the caramel flavoring with the vanilla.
