Have you taken the wilton 3 course, if you have time to get that in they would cover both your questions for the tiered and fondant
if not you could always get a wilton yearbook, they ahve dierections in the back/middle
and practice, good luck

How about doing white fondant to cover your cakes and then make two or three colours of fondant and cut out accents (like circles or squares) and arrange them on a cake. I did a three tiered like this a while back and it looked pretty cool. The pics are in my gallery. It wasn't difficult to do and the girl was very happy (it was a sweet 16 cake).

i'm still scared of fondant, so i'll be no help there....but my cakes in my photos are buttercream smoothed to look like fondant, most all of my cakes are simple (maybe time consuming) but don't take i BIG BUNCH of talent b/c i don't have what alot of people on here have, so if i can help u, let me know

there is a pink & black fondant i did for my sis b-day in my photos & it was a fondant nightmare icon_biggrin.gificon_biggrin.gif

I agree with LisaCB about the white with diffent colors on it. Circles are the easiest and use her favorite colors or fav color scheme.

this cake is great for fun factor!! I think any sister would love it. The circles on the top are dried on 18 gauge wire.

If you are doing a 2 tier 6 inch and 8 inch I simply ice the cake with buttercream and then put it in the freezer for a few hours to get the corners really hard. Roll out the fondant about a 1/4 inch or more and put it on the cake and smooth. I don't have any great examples for this but there are many on the internet. I then cute of the bottom with a pizza cutter and your done. when you are ready to stack put about 6-8 regular straws in the bottom layer. put a small amount of butter cream down and then put on the smaller layer. Now you are ready to put on the circles and you are ready to go.

If you have more questions please let me know.

Good luck!!

I have done fondant myself but never buttercream. I have used marshmellow fondant and found it fairley easy. My suggestion would be to make a large enough recipe of fondant that you could practice with some on a box or something first. also you should choose a design that is forgiving and you can easily cover any mistakes. Good luck
