I don't know what went wrong! I am making a modified cake mix recipe, but decided to change a couple of things and now my cake batter is swirling around in a puddle of oil. Here is what I put in the batter:

1 pkg. cake mix
4 eggs
1 c oil
1 sml. pkg vanilla instant pudding
1 c warmed heavy cream with vanilla beans (this originally is supposed to be a cup of whole milk, most likely cold)

In an effort to try to soak up some of the oil, I threw in 1/3 c. flour and 1/3 c. sour cream. I don't know what to do!!! I'd like to salvage it if possible. Anyone know why oh why my cake batter is so oily???? It is seriously slipping off the spatula. icon_cry.gif

I think you just overwhelmed it with fats, eggs, oil, sour cream, heavy cream are all fats. You could add another cake mix and the correct proportions of the other ingredients, or just bake it and see what happens.

I made another mix, but added 3/4 c. skim milk and 1/2 c. oil and the rest the same. Mixed them together and they blended fairly well, but still on the greasy side. We'll see what turns up in an hour. icon_rolleyes.gif

I may be tempted to leave the oil out completely or use just 1/4 cup. I definitely think 1 cup of oil is way too much along with 1 cup of cream.

I have some to do that ...and I figured out the oil was caused by spraying the pan to much!!

Amazingly, the cakes turned out great! Moist and dense, just the way I was wanting them to turn out!
