I'm going to attempt to make a red velvet cake from scratch, but people have told me that there's a cream cheese frosting that goes with it. Is this correct? I'm not a fan of cream cheese icing and wondered if putting on another icing would change the taste of the cake or not. Please help!

I don't use cream cheese icings alot since you have to keep it in the fridge. When I have made Red Velvet cake I have used my regular buttercream and it is still good. icon_smile.gif

I'm sitting right here with a scratch recipe for red velvet cake, and the filling/frosting to go with it! Here's the frosting recipe:

1 cup milk
3 TB AP flour
2 sticks (1 c) unsalted butter OR 1 stick unsalted butter and 8 oz. cream cheese
1 cup confectioners' sugar
1 tsp vanilla

In a small saucepan stir together milk and flour and cook, stirring constantly, over low heat until thick. Cool milk mixture. In a large bowl with an electric mixer beat together butter, cream cheese, sugar and vanilla until well blended. Add cool milk mixture and beat until spreadable.

I don't like cream cheese either, so I used the all-butter recipe and liked it very much! But I'll be making the cream cheese version this week for a customer.

Let me know how you like it if you try it!
