Hi,

I have this great recipe I rely on for my chocolate cake that uses a cup of mayonaise. I really love this recipe and have been meaning to try it out with other cake flavors.

First I wanted to check with the experts here on two concerns:

1. Will the cake have a mayonaise flavor without the stronger chocolate taste to cover it up?

2. Will the lemon juice I add to the cake cause an undesired reaction with the mayonaise?

Thanks so much for reading, I really appreciate some help on this one before I start wasting time and supplies on a cake that may taste like curdled mayo.

Mayonaise is eggs and oil. It should not be a problem to add lemon. It would be worth experimenting.

I tried my chocolate cake as a plain cake, by adding a bit of cake flour instead of the cocoa. It was much more dense, and I liked it but my mom thought it tasted 'strange'

Mayo is made with eggs, oil AND some type of acid (either lemon juice or vinegar). So you should be fine. My family puts it in cornbread, to make it more moist and dense, you can't taste it.

You shouldn't taste the mayo at all. Mayo can be used to replace the oil & it should make your cake moist. I've tasted cakes, cornbread, & even mashed potatos with mayo added & haven't ever detected it. I haven't personally made a cake with it, but also have a choc. cake recipe that calls for it. Let us know how your other flavors turn out.

It make a really moist cake, not sure how it would stack. You can't taste the mayo at all. It is my sons favorite cake-especially with ice cold milk.

Oh, my gosh...when I was in junior high we had to give demonstration speeches and one the guys in class did a demo on how to make mayonaise cake. It was SO good! The best cake I've ever had! I used to have the recipe but not anymore icon_sad.gif

So from what I'm gathering from this thread, you could make any chocolate cake and sub mayo? Would you just replace the oil with the mayo?! Any advice appreciated!! I'd love to make a mayo cake!!

Here is a recipe for both scratch and box mix. I just use the box mix. My MIL used to make it from scratch, but that was forever ago.
