
My wonderful mom is turning 60 in a few weeks and I'm thinking 60 cupcakes would be fun for the party (about 45 of us - children and adults). I will be traveling to NC for the event and would like to 'travel light' in terms of cake supplies. Hey Doug - we'll be eating REAL BBQ, eastern NC style not too far from you. No bbq in the world matches NC bbq!!
I need help with flavors and decorating ideas. I would like several flavors--chocolate and vanilla for sure, but some more interesting flavors would be good. Any good ideas? Mom loves coconut and banana, so I'm thinking coconut with key lime filling and coconut BC. Any good banana ideas? I'm thinking about 5 different flavors, but I'd prefer not to make 5 full batches of cupcakes. What's a good way to get two flavors out of one batch?
I'm proficient with a 1M tip so I can do some mean icing swirlies, but I need other decorating ideas. I'll probably fabricate a cupcake stand of some sort--maybe like one Doug posted awhile back using moving boxes (gotta find that post
).

Just an idea - may not look too pretty - but we did the same thing for my mother's 70th b-day party last year. I baked a ton of cupcakes, made different color icings and fondant. Then I turned the grandchildren loose and they made the most fantastic items which brought my mother to tears. They made little figures (I took one of my marzipan modeling books for inspiration for them), make great buttercream decorations, wrote 'I love you' messages on some, made animal faces with fondant, etc....
Of course if you are looking for something professional and pretty this isn't going to work!

chocolate w/ banana
chocolate w/ coconut
chocolate w/ ding-dong style
yellow w/ banana
yellow w/ coconut
yellow w/ lemon
icing could be flavored to match.

batter -- make "neutral" flavor of yellow.
the split into 2 or 3 or even 4 portions.
flavor each separately w/ extract/flavor oils
also toss in "additions"
thus one yellow cake (butter recipe!) could yield:
plain yellow (then filled as above)
coconut w/ shredded coconut tossed in!
lemon w/ lemon rind grated in if have
banana w/ chunks of banana added
tropical surprise -- pineapple (use juice in place of water) w/ crushed pineapple and shredded coconut.
and of course could complimentary flavors of nuts to these.
chocolate w/ white chocolate chips and macadamia nuts????

Doug That's the thread I was looking for! I think I've got some square boxes in the attic that will be perfect. But is it ever going to get cool enough to go up there and get them?
