There is a frozen custard place here that has a caramel apple sundae in the fall, and the caramel they use is to die for! It has teeney pices of chopped up apple in it. I was thinking the other day about trying to mix in some tiny pieces of apples that I sauteed quickly in a little butter and add it to the caramel I make from sweetened condensed milk.

I made a cake here a while back used white cake mix and added coffee creamer liquid vanilla/carmel then filled using canned apple pie filling and ice cream carmel topping drizzled over it.
It was wonderful...

This is the caramel apple filling I use. It's really easy.

Empty one can of Sweetened Condensed Milk in to a pot and set it on low for two hours. Stirring occasionally. Meanwhile, boil one pealed and sliced apple for 10 minutes. Drain and place apple on paper towel to dry a little. Chop apple. Add to camelized SCM when it's done.

Crafty, did you use the filling straight out of the can or did you have to chop up to smaller chunks?

If you just want caramel....
I bought the container of caramel for dipping and warmed it a few seconds in the micro and then spread it on. The other layers were buttercream. It was very sweet, but it worked fine and had the real caramel taste.

Here is the recipe I use:

1-2 lg granny smith apples
1 1/2 c light brown sugar
1 stick butter
1/4 tsp salt
1/4 c apple juice

Mix all ingredients except apples in an iron skillet over low-med heat. Stir with wire whisk until all ingredients are incorporated. Simmer until bubbling well. Add apples and simmer until apples are soft. Sauce will thicken as it sits.

that all sounds absolutely tasty.
For this hee haw themed cakewalk last week, one of the cakes I made (the basket of apples- that never got donated cause it looked awful icon_smile.gif) -ah wlell family loved it) was apple cake and caramel filling/icing.
http://cake.allrecipes.com/az/AppleCakeIV.asp that's the cake recipe I used. I think that would have filled 9X13 - I made hte apple basket with it including the apples (minicupcakes). Then the filling and the frosting were the same: http://cake.allrecipes.com/az/CaramelFrostingIV.asp I doubled the frosting recipe
ANyway my sister took the cake to some classy german friends of ours for tea and they all absolutely loved the cake and the icing (my sister isnt a big sweets person either and she gorged on the cake so that's a good sign lol)

Yes I did use it from can and then drizzled carmel ice cream topping it was wonderful. Just dont use the whole can and pipe around the cake edges good so it doesnt seep out but I didnt have a problem with it.

quills, I made a wedding cake a few years back for a woman whose family owns a large apple orchard nearby. We did a butter-based yellow cake with apple filling and buttercream icing. yum. she loved it and I got several other wedding cake orders off that cake just because it was so tasty. icon_smile.gif

I would recommend something that has more of a buttery flavor, with a denser texture so it holds up to the caramel apple filling (probably not chocolate, though). You don't want the cake and filling to "compete" for attention in the mouth. icon_eek.gif
