Your willingness to share time, and recipes with those of us that are new has been beyond wonderful for me. Would anyone be interesed in a thread where we could share our all time favorite cake, filling, and icing combinations???? It would be wonderful to put together a handy reference list of these great combos when we are just flat out of ideas!!!!! As a newbie I am in short supply of ideas, but I love baking a cake or using an idea that you have so generously shared. I always keep the names and make little notes about the person who has shared a recipe or idea on these forums. My way of getting to know everyone!!

White or yellow cake with strawberry filling and vanilla pastry cream in the layers with vanilla swiss meringue buttercream.. a rich chocolate cake with dark chocolate mousse in the layers and chocolate ganache over the whole thing.. lemon cake with sweetened whipped cream and fresh raspberries in the layers with either cream cheese icing or vanilla swiss meringue buttercream.. chocolate cake with peppermint swiss meringue buttercream filling in the layers and chocolate swiss meringue buttercream.. coconut cake with pineapple filling and coconut pastry cream in the layers and coconut swiss meringie buttercream.. Carrot cake with cream cheese icing in the layers and on the top.. Banana cake with praline filing and vanilla pastry cream in the layers with caramel swiss mernigue buttercream.. just to name a few.. icon_wink.gif

White almond cake with strawberry cream filling and buttercream icing, butter cake with raspberry cream filling and chocolate Italian meringue icing, chocolate cake with peanut butter filling and chocolate Italian meringue icing, tres leches cake with extra milk sauce icing with whipped cream, chocolate cake with Baily's Irish Cream added to the recipe with a coffee cream cheese filling and cream cheese icing dusted with cocoa powder and a drizzle of chocolate ganache YUMMY!

Probably boring but my fav is scratch chocolate cake with raspberry Chambord SMBC filling...

Second my fav would be scratch lemon cake soaked in Limoncello syrup with homemade lemon curd alternately layered with SMBC

3rd would be carrot cake and white chocolate cream cheese icing

Praline Filling

Ingredients
1/2 cup butter
1 cup firmly packed brown sugar
dash of salt
1/2 cup evaporated milk
2 cups powdered sugar
1/2 teaspoon vanilla (or use Kentucky bourbon whiskey...yum)
1 cup finely chopped toasted pecans

Melt butter in a medium saucepan. Add brown sugar and salt; bring to a boil. Boil for 2 minutes, stirring constantly. Remove from heat; stir in milk. Bring mixture to a boil, and let boil for 2 minutes or until 232 degrees.

Remove praline mixture from heat. Cool to lukewarm. Stir in powdered sugar and vanilla; beat with a wooden spoon until mixture is smooth.

I have posted some of the others to the recipe section, but it takes a while to have them show up.

Peppermint SMBC is easy.. make a batch of SMBC and add a tsp peppermint oil and 1/2 cup of crushed peppermint candies.. VERY good.. you can add a drop of pink food coloring too.

JaneK.. you should try this lemon curd recipe:

Limoncello Lemon Curd

3 to 4 lemons
6 large egg yolks
1 cup sugar
6 tablespoons cold butter, diced
1/4 cup limoncello liqueur

Finely grate enough lemon zest to equal 2 teaspoons. Squeeze enough juice to equal 1/2 cup. Strain juice through a fine, wire-meshed strainer. Set aside.
Fill a medium saucepan with enough water to come 1 1/2 inches up the sides of the pan. Bring to a simmer over medium-high heat. In a heat-resistant bowl, whisk together the egg yolks and sugar until pale and slightly thickened. Add the reserved zest and juice and whisk to combine.
Set the bowl with the egg mixture over the simmering water and whisk constantly until mixture thickens, 10 to 12 minutes. The mixture will turn a light yellow color and coat the back of a spoon. Remove the bowl from the heat and whisk the diced butter into the curd, 1 tablespoon at a time, allowing each piece to incorporate before adding the next. Stir in the limoncello. Strain the curd through a wire-meshed strainer and place in a clean, non-reactive container. Cover with plastic wrap, pressing the plastic wrap onto the surface of the lemon curd to keep a skin from forming. Chill completely.

That lemon cake combo sounds really good.. I'm going to have to give it a go.. thumbs_up.gif

Oh my, these sound so good, I can't wait to try these.

The one's I like are fresh strawberry cake with marshmellow cream cheese filling, Lemon cake with blueberry filling and snickerdoodle cake with cinnamon frosting. Although the snickerdoodle is not from scratch you can't tell. It's very moist and very very good!

My signature spice cake with maple buttercream frosting. I'm working on a cookie flyer now so the most recent 'surprise' I tried (testing out on co-workers and family) was one I'm naming Apple Harvest--a combination of fresh apples, walnuts and spices with a simple glaze. Come to think of it a drizzle of caramel might not be a bad idea on it. Hmmmmm......

I haven't tried this one yet, but someone the other day suggested a strawberry cake with cheesecake pudding in the mix. Sounded great! icon_biggrin.gif

I baked a classic white cake with Nutella. Everyone loved it so I decided to taste for myself. I try not to do it since I am dieting. It was heavenly with the classic white cake covered in mmf. Yummy!!!!! There goes my diet. LOL

chocolate cake with peanut butter ganache filling. Add a layer of peanut butter ganache on the top of the cake and then cover the entire cake with Ganache!

Also, strawberry cake with cream cheese frosting.

Chocolate, chocolate chip cake with whipped ganache and raspberry preserves.
Champagne cake with bavarian cream mousse and fresh raspberries.
Red velvet cake with cream cheese buttercream.
Those are my favorites.

yellow cake w/ straawberry cheesecake filling- just add a thin layer of buttercream, a layer of strawberry jam, and a layer of cheesecake filling.

Cheesecake filling:
Beat one c. whipping cream and 1/3 c. granulated sugar on high speed until nice and thick. Then fold in one package cheesecake flavoured instant pudding dry.

Or chocolate kahlua cake

my bread and butter are the following two ....i have a hard time getting anyone to try anything else, these are THAT popular.....

#1-Lemon/Rosemary Cream Cake with lemon curd filling, and Earlene Moore's cream cheese buttercream icing

#2-Martha Stewart's coconut pecan cake, with ganache AND coconut filling, covered in chocolate icing.

I have a hard time finding a lemon curd recipe that i feel is comprable to store bought 'Robinson's' i've tried at least 10....they all seem to have a bitter edge to them....everyone else enjoys it, but.....
any suggestions?

There are a couple of recipes on here, but I just melt peanut butter chips and add some heavy cream, I think I did one package to 1/2 cup cream.

I also just made chocolate peanutbutter cake balls last night and just melted regular peanutbutter 2 cups, added about 1 1/2 cups ps and milk to thin down. Tastes just like Reses peanutbutter cups peanut butter!
