Should I use cake flour or AP flour.

I use all purpose. No yeast.

i've been using this one for years. sometimes i add chopped english walnuts and sprinkle some on top. and i always sprinkle the top generously with turbenado sugar.

2 c. all purpose flour
2 & 3/4 tsp. baking flour
1/2 tsp. salt (i use kosher)
3/4 c. sugar
1/2 c. shortening
2 eggs
3 medium bananas
1/2 c. chopped nuts (opt.)

*grease & flour 9x5x3 loaf pan
*beat together sugar, eggs, & shortening
*mash 2 of the bananas and roughly chop 1
*sift together flour, bkg. powder, & salt
*add sifted ing. alternately with mashed bananas beginning and ending with dry ing.
*stir in chopped banana and nuts
*bake 50-60 minutes at 350
*cool 15 minutes in pan & remove to cool completely on wire rack.
