
I see a lot of recipes that require "Dutch process" chocolate. Are there any brands readily available in a grocery store that are considered "Dutch process" or do I need to find that in a specialty store? Will it make any difference to a chocolate buttercream if I use cocoa powder that is not "Dutch process"? Thanks so much for your help!

Most stores carry Hershey DP cocoa, marketed under the name "Special Dark." In baking it won't always make a huge difference, but in icing it really does. With natural cocoa you will get a definite cocoa flavor - slightly bitter, and a light brown color. With DP cocoa you get a fudgier, chocolatier flavor and a dark brown color.

I have some hershey dutch process in my cupboard right now and it does not say special dark. I saw the special dark in the store just this weekend and the box looks different than the dutch process box. Unless they've changed the packaging on the dutch process, I think they are two different products ( I didn't look at the special dark that closely to see if it said dutch process or not)


Thank you for your help! I will scout out the supermarkets for "Special Dark". Hershey's indicates on their website that they make "Natural" & "Special Dark" which they point out is DP. The "Special Dark" has a red banner across the bottom. Hopefully I will be able to find it locally (southern NH).

I have the hardest time finding the Hershey's DP cocoa around here! The one and only place I have found it is Giant Eagle. I don't know if they have those where you live, but i've checked two walmarts, two krogers, and a Kmart and none of them carried it.

If you can't find it, ask your grocery store manager to order it for you. Most grocers are happy to do this since a happy customer is a repeat customer!
