Help.....i Need A Recipe For A Dipping Sauce....

for some chicken empanadas that I'm making for my friends for a bible study that we're having this weekend. I normally don't cook for my friends, in fact, very few of them know that I'm learning to cook, so this is going to be a surprise. I was watching Paula Deen make chicken empanadas this week and realized that I had all of the ingredients already in the house to make them. The empanadas will be made with:

3 cups chopped, cooked chicken
1 (8-ounce) package shredded Colby and Monterey Jack cheese blend
4 ounces cream cheese, softened
1/4 cup chopped red bell pepper
1 jalapeno, seeded and chopped
1 tablespoon ground cumin
1 1/2 teaspoons salt
1/2 teaspoon pepper
1 (15-ounce) package refrigerated pie crusts

I'm actually going to double the recipe to make sure there are plenty for everyone because the empanadas are kind of small. Oh, I'm using all Monterey Jack cheese because that's what I have on hand. I was thinking of some sort of creamy mexican style dipping sauce, but I'm still just learning and have no clue how to go about making one or what to put in it. I"ll have extra cream cheese and I also have lots of sour cream on hand. Any help or suggestions would be greatly appreciated! Thank you in advance.

ohh...man I wish I knew the recipe for the dip at this mexican place we go to...its called Espinaca (I will have to look it up and see if I find any recipes)....anyway its creamy, white sauce that they serve with chips and also over a couple of their specialties......its REALLY good (served warm).

ok here is a recipe I found quickly.....I know the one I have had has a white cheese, tomato and spinach so its probably close...


Ingredients:
5 lb. loaf jalepeno pepper cheese*
2 1/2 cups milk
1/2 cup diced pimientos
16 oz. diced white onion
18 oz. diced tomato
24 oz. chopped frozen spinach, thawed and well drained

Directions:
(1)Cut cheese into 1 inch pieces.

(2)Place cheese in 4 inch deep double boiler pan; simmer until cheese is melted

(3)Add pimientos, tomatoes, onion and spincah; simmer for 15 minutes.

(4)Add milk, stir until thoroughly mixed.

(5) Serve with corn chips.

*This is obviously in restaurant proportions. I used a 2 pound loaf of Velveeta Mexican, the hot one, and adjusted the other ingredients accordingly, using one-10 oz. pkg. of chopped frozen spinach.

another one I found online

ESPINACA DIP

1 lb. Land O'Lakes Jalapeno cheese*
1 pkg. frozen shredded spinach
1 medium tomato, diced

Mix all ingredients in a bowl and microwave until cheese is melted.

Serve with tortilla chips.

*have tried other cheeses, but they don't melt nearly as well - this cheese is sold in the deli

thank you. My best friend and I make a dip similar to this that's made with sliced/chopped jalapenos, jalapeno juice, chopped spinach, white american cheese, and half & half. LOL, she got the recipe from a restaurant that used it on sandwiches. I could eat myself sick on that stuff. In fact, we just made it a few weekends ago. Everyone loves it, but it's a bit pricey to make. Someday I'm gonna make burgers and use it as a topping.

I just browed my cabinets and fridge for ingredients, I have the following ingredients on hand:
Roasted Red Bell Peppers
Chipotle peppers in adobo sauce
hot sauce
fire roasted diced tomatoes
cream cheese
Thought I had sour cream, but it's expired. icon_cry.gif I can afford to go get a small tub if need be
black beans
cannelini beans(chickpeas)
cheddar cheese
mozzarella cheese
bacon
italian sausage
regular breakfast type sausage patties
SPICES:
cumin, red pepper flakes, chili powder, onion powder, dried minced onions(Ihave regular white onions and a few shallots also), garlic(powder, garlic bulbs, minced garlic in the fridge), parsley flakes, chopped chives, Tony Chacere's Creole seasoning, worcestershire sauce.

I'm listing what I have available because I'm on an extremely limited income and have only $4 until payday next wednesday. I have a whole bunch of other spices also, but not anything that I think would go in a dip. I'm really hoping someone could look at the list of what I have on hand and help me put something delicious together. I know that I can afford to go get a small tub of sour cream, but that's about it. I know it might seem ridiculous that I want to take a dish with my income the way it is, but I just really feel the need to provide something special for my friends. I'm going to be moving in 3 months. thank you all for looking and for any ideas.

Okay....I don't have a recipe for you, but try this site...

You can type in the ingrediants you have on hand and it will direct you to some recipes that fit what you have with what you want to make. I've found some good cookie recipes on there when I ran out of ingredients for my tried and true recipes.

Well what I would do is bring some salsa, sour cream, and guacamole so they could choose what they wanted to dip in. I love guacamole. mmmmm...anyways if you wanted something cheesy you could just do rotel cheese dip. It's just velveeta and a can of rotel. Actually I use 2 cans of rotel for one package of velveeta. Just melt and serve. I usually put it in my crock pot. That way it keeps it warm and I don't have to worry about it. Plus if you happen to have extra cheese just take it home and eat it with some tortilla chips. Dang now I want some chips and cheese! I think I'm going to have to raid my pantry now. icon_lol.gif HTH.
