I was wondering if anyone can help me. I've just finished making some petit fours. They are almond cake (no filling) covered with poured fondant (Wilton recipe). The client is coming to pick them up tomorrow afternoon. Do I put them in the frigde or keep at room temperature. The weather here is very, very hot, but I do have air conditioner in my house.
Thanks!

Hi and Welcome, divinecake. icon_smile.gif

If your house is cool, your petit fours should be fine on the counter.

I hope you didn't put them in the fridge. I did once and it was a MISTAKE. They started to thaw and the icing started to look and feel wet again. I made some and left at room temp after putting the icing on and it was no problem.
