How do I figure out how many cups in a pound. I went out and bought a 25lb. bag of PS and my recipe calls for measurement by the lb. If anyone can help me I need to make a batch of BC that calls for three lbs of PS TIA

One pound of powdered sugar is about 4 cups.

well, 2 cups can equal one pound. That's true. However in this case where powdered sugar is being measured, then aprox. 4 cups equals one pound is correct. I use about 3 and 3/4 cups per pound of ps.

But I will say that I have found that I can't live without my small kitchen scale! LOL. I weigh so many of my ingredients now because I buy in bulk.

I weighed out my ps and came up with 4 1/2 c per pound. That is unsifted just stirred a little with a knife.

it all depends on what you are weighing. a cup of feathers will weigh less than a cup of rocks. your best bet would be to invest in scale and weigh what you need. that would be the most accurate. good luck. icon_smile.gif

this is straight from the source icon_smile.gif - www. sugar.org (if anybody would know i would imagine it would be them!)

here is what they list for conversions:

1 pound granulated sugar = 2 to 2 1/2 cups

1 pound confectioners sugar = 4 to 4 1/2 cups

1 pound brown sugar = 2 1/4 to 2 1/2 packed cups

It is actually a very interesting website - lots of info!

I don't know how I lived without a kitchen scale now that I have one. One of the best investments I have made. It's so much easier then guessing.

so true! every baker should have a scale! baking isn't like just cooking - it is a science! that's why sometimes when you alter a recipe or try to double it you end up with a mess!

Thanks everyone for all of your help. I went ahead and made the BC using 4 cups per Lb. I thought it came out sweeter than usual but its never crusted so well. I will be investing in a kitchen scale since I already have just about every other kitchen gizmo there is. Thanks again.
