I know that a lot of you on here also do catering - and I am catering a large wedding this weekend and they want some cheese and crackers and I am having a hard time finding crackers that have a good flavor that goes with all assorted cheeses. Any suggestions? I was at a wedding last year and all I can remember about the whole thing was how good the crackers were that they had and I tried so hard to find out what they were but was unsucessful icon_sad.gif Any suggestions welcomed!! thanks

I have made my own seasoned crackers for caterings to go with salads ore cheeses. There are several recipes out there to achieve a good flavor cracker, my most requested is very simple. Take 1 cup vegetable oil, one packet of ranch dressing dry mix, add together until well blended. Take 4 sleeves of crackers, like saltines and place in a large bowl. I use a large plastic tub with a lid. Pour oil mix over the crackers, and toss gently until they are all coated. I use the tub with lid and roll it gently like a drum, I then place the crackers out of a large sheet pan and dry and absorb the flavors. Thats it! You can use any cracker and any dry dressing mix to create other flavors, like an italian blend, If your feel real spunky you can create your own blend of fresh herbs, spices and oil.

OH MY GOSH! i have never heard of something like that, I am so going to have to try that tonight and see what I get. Thank you so much. Any other opinions out there?

I do that with oyster crackers for snacks and they are so good.

would saltines be an okay size or are they too big? don't really know if there is a rule of thumb or something out there?

I use Toasteds crackers once in awhile. Most of the time I use "entertainment' crackers (I can't recall the name brand - I'm out right now) that I get at GFS. I use them for cheeseball and sliced cheeses with sliced summer sausage for my Appetizer Table.

Sysco has some great crackers that are shaped like little butterflies!! But they only come package in individual packets of 2 crackers each (for restaurant soup). Those would be SO pretty on my Appetizer table, but I don't want to open 200 packets of crackers so I can put them on a tray!

There is really no rule on the size . Ritz, Saltines, butter wafer, sesame, wheat thins all make a good size. I know at Sams they carry a variety pack with more specialty type crackers. I am sure that any of the warehouse stors carry something. The only problem with the food vendors, ie. Sysco, Ben E. Keith, is that theirs are pre packed, like indy said, and what a pain to unwrap them. plus you are paying more for the convienience of the packaging. The only time these work well, is for a sit down or buffet for alot of people and each person can have a pack of crackers for their salads, it saves from having to have cracker baskets and perhaps wasting alot, plus you cannot reuse these for obvious reasons. I think the recipe works well with the crackers I mentioned above. I have not tried it with the pre- flavored crackers like wheat thins , they have a tomato basil cracker, I think this recipe might be too much flavor combinations and be over seasoned, unless you were to add your fresh herbs to compliment their flavor. Hope you enjoy them, then can be addictive.

thank you so much cupcake - i am definatley going to try the saltines with the ranch packet, sounds so yummy. how long should I leave the crackers out to absorb the seasoning? don't want to leave them out too long and go stale icon_smile.gif
