
Does anyone have a suggestions for a healthy cake alternative? I would like to make a cake for a friend who will be having her first anniversary of opening her Curves. I was thinking a carrot or whole wheat something. Or maybe something that is a faux cake that could be considered a healthier sweet treat. Thanks for any suggestions.

I use spelt flour in my personal baking all the time and some of the cakes I make for family. I also use fruit sugar (which doesnt mess up blood sugar levels- it's good for icing sugar substitute, and also to replace regular sugar for the cake itself- but I cut the sugar amount in half (in the following carrot cake recipe- which goes over very well and requested often - and also I use solid coconut oil for baking.
For starters anyway here is my carrot cake recipe- I have others but I'm not sure who all you're serving this too. And how 'healthy' you want it LOL. I mean it's all very yummy- just that I have a range from that carrot cake type recipe to choco zucchini cake (baking with carob instead of chco) all the waey to high protein muffins and cookies/bars that have lots of ground nuts and seeds and flax in them- that taste divine but are super energy/power/healthy lol. So again, here's one recipe for starters. HTH

*so when you're using this recipe- just sub the real sugar for berry sugar (fruit sugar) and spelt flour for regular flour. I use other flours in baking too but they require a bit more experimentation before I pass on the recipes for someone to make a cake for someone else and it to go perfeclty every time- ie rice/potato flour etc- oh and remember to cut the sugar in the cake part in half. I'm not into sweets much and neither is my family, but even 'regular' people thought the caleld for amount was too much.

there is a recipe that weight watches uses for muffins using a carrot or chocolate cake mix, a can of pureed pumpkin and water... im not use of the recipe and id ask my mom.. but being its almost midnight shes sleepin ... i have made cakes out of it and its awsome and lower in fat

I don't remember the exact recipe, but you may want to google it....I think there is a such recipe that is something like Diet Coke Cake....sounds odd, but it is suppose to be very yummy....it involves a cake mix and a can of diet coke and that is it....also can vary it up, be inventive...like use a can of diet cherry coke with the cake mix....try yellow cake mix or a chocolate cake mix(unsure if difference in calories in the actual different mixes, might want to check the different mixes)...but then you don't add anything to it like is instructed, skip the oil/egg/etc., you just add a diet soda of choice to mix.....this is a Weight Watchers trick...people raved....
Also, I have heard of people switching up the recipe with no oil and instead apple sauce...
The hard part is the icing....perhaps look into an icing that is sugar free somehow....

This cake doesn't have a traditional "frosting", but is really yummy! And it's easy to make!
Pineapple Orange Cake.
1 package (18-1/4 ounces) yellow cake mix
1 can (11 ounces) mandarin oranges, undrained
4 egg whites
1/2 cup unsweetened applesauce
Topping
1 can (20 ounces) crushed pineapple, undrained
1 package (1 ounce) sugar-free instant vanilla pudding mix
1 carton (8 ounces) reduced-fat whipped topping
In a large mixing bowl, beat the cake mix, oranges, egg whites and applesauce on low speed for 2 minutes. Pour into a 13-in. x 9-in. x 2-in. baking dish coated with nonstick cooking spray.
Bake at 350° for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
In a bowl, combine the pineapple and pudding mix. Fold in whipped topping just until blended. Spread over cake. Refrigerate for at least 1 hour before serving. Yield: 15 servings.
1 piece equals 231 calories, 5 g fat (3 g saturated fat), 0 cholesterol, 310 mg sodium, 43 g carbohydrate, 1 g fiber, 3 g protein.
