
I have a retirement cake to do for Sept. 8th!!! This is to be a very special retirement for a Master Chief! She wants a spice cake! I have never made a spice cake so I figured I'd solicit ya'll here for a really good one. One that won't let me down because this lady is very special!
Also, what kind of filling would work best with a spice cake? A cream cheese, a fruit??

I just made a Butterscotch Spice Cake this weekend. I don't even know where I got the recipe. It calls for a box of butterscotch pudding mix. I used apple pie filling as the filling (after whirling it through the food processor for a minute. The rest of the ingredients are 4 eggs, 1 cup water and 1/2 cup oil. Mix and bake per instructions of your pans. I baked this cake on Thursday and it is still moist today.
FYI - guess I need to add that I just used the spice cake mix from Duncan Hines.

I've read that the recipe for spice cake in The Whimsical Bakehouse book (I think!) is one of the best around!


This is the the cake I made for my step-daughter's wedding, and it got me over $4,000 in orders for the same cake
SPICE CAKE WITH BLACKBERRY FILLING AND CREAM CHEESE FROSTING
For cake
2 cups cake flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground allspice
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/2 cup (1 stick) unsalted butter, room temperature
1 1/2 cups (packed) golden brown sugar
3 large eggs, separated
1 cup sour cream
For filling
3 1/2-pint baskets blackberries
1/4 cup sugar
For frosting
1 1/2 8-ounce packages cream cheese, room temperature
3/4 cup (1 1/2 sticks) unsalted butter, room temperature
5 cups powdered sugar (about 1 1/4 pounds)
2 tablespoons sour cream
1 teaspoon vanilla extract
1 1/2-pint basket blackberries
Make cake:
Preheat oven to 350°F. Butter and flour 9-inch-diameter springform pan with 2 3/4-inch-high sides. Sift first 7 ingredients into small bowl. Using electric mixer, beat butter in large bowl until fluffy. Add brown sugar and beat until well blended. Beat in egg yolks. Beat in flour mixture in 3 additions alternately with sour cream in 2 additions. Using clean dry beaters, beat egg whites in medium bowl until stiff but not dry; fold into batter in 2 additions. Transfer batter to prepared pan.
Bake cake until top is golden and tester inserted into center comes out clean, about 45 minutes. Cool cake 10 minutes. Cut around pan sides; release pan sides. Cool cake completely on rack.
Make filling:
Mix berries and sugar in bowl. Mash fruit coarsely with fork. Let stand 20 minutes and up to 1 hour.
Make frosting:
Beat cream cheese and butter in large bowl until fluffy. Beat in sugar, then sour cream and vanilla.

WOW!!! Thank you!!!!! I'll copy that down. I'm making a cream cheese filling for this spice cake! Do you have any suggestions for that or will your frosting work as well as a filling?
BTW, I just picked a boo coo of blackberries over the weekend and made blackberry filling and vacuum sealed it and froze it. It is sooooooooooo good!!!!!!!!!!!!

If you want to decorate the cake, I would suggest that you fill and crumb coat the cake with the above icing, then put your crusting buttercream over the top.
When I made the cake, I covered it with fondant:


Super simple...plain fondant, crimped, and fresh roses from the garden with some extra callas from the florist.
I have absolutely no decorating skill whatsoever.



I mix different icings all the time. It'll be fine

Sorry, somehow I missed your last question. I'd make a double batch for a sheeet cake.

WBH one is good, I've made it twice in the last few weeks. Txkat's sounds good, though!
