Question....our local supermarket is having a sale on butter and I want to stock up. Can I put it in the freezer? Then, when I want to use it, can it go from freezer to countertop? And, how long will it take to thaw? The butter is 3/$5.00...so I wanted to buy probably 6-9 boxes.

Will anything change with the consistency once it is thawed?

Thanks

I also stock up when it is on sale. I freeze it all the time and have no problems. I think I have 10 lbs. in there now.

I freeze butter all the time and have never had a problem with the consistency changing. I normally thaw in the refridgerator, but even this way it does not take very long to thaw.

I freeze butter all the time. But, let it thaw before trying to beat it with your mixer. Years ago a friend's KA had to go to the shop because she tried to "soften" frozen butter!

I've done it for years and never had any problem. It does take a good while to thaw, but have never been able to tell the difference from 'fresh'.

I agree with everyone else ... I always stock up when it's on sale and have a bunch of it in my freezer. When I need to use it, I set it out on the counter in the morning and by afternoon, it's ready to use! icon_smile.gif

I go to Cosco and freeze the butter I buy there in bulk (and it's great butter - also very light in color)

Wow! Thanks everyone for your quick responses. My DH is starting to wonder why there's no room in the fridge for anything (since I have been buying lots of many things like cream cheese, butter, heavy cream, buttermilk....plus my frosting is in there!!) I really need to build a new kitchen! We need an addition anyway, and I had told him we could keep this kitchen, that was BEFORE I started baking so much. My supplies are in the MUDROOM in a tote, because there is no other place! I keep my new birthday present (Turntable) in the box (except when I am using it).
Ok, this is way off topic....sorry. Thanks for all the help!

i also freeze my butter. but i never thought of not freezing it. but to thaw it i put it in a bowl of water. it thaws quickly and the water keeps it from getting ultra soft and almost melted.

I also buy butter in bulk at Costco (4 lbs. for approx $6) and I always freeze it, it can thaw in the fridge or countertop.

I always freeze my butter and sometimes I soften it in the microwave...10 seconds on high in spurts. You have to be careful not to melt it.

I also freeze cream cheese. It can give it a grainy texture, but once thawed out all the way it's usually fine. In fact I used some the other day for cream cheese frosting. It turned out great.

I buy butter in bulk and have always froze it with no problems. I was afraid to freeze cream cheese but I just might try it now. I make alot of carrot cakes with cream cheese icing. It would be nice to buy it in large amounts when on sale.

I also freeze my butter, but I put the package into a freezer zipper bag just to be safe from odors.

I freeze butter too, and in a ziplock, just like Misdawn! I put it in the fridge at night to thaw, and the next afternoon it's good to go!!

cream cheese is NOT to be frozen. it says so on the box. it doesnt return to its proper consistency. my thermostat in my fridge went bad and everything froze. i had to throw out the cream cheese cause it made the cakes grainy and not appetizing at all. i am sure there is a more scientific answer but i dont know it. but i would suggest not freezing the cream cheese.
