Well, it depends on what kind of sugar you want to measure: granulated weighs different than powdered. Here is a chart with some equivalents:

Not to be the bearer of bad news, but if it's calling for one ounce by weight of sugar, that's NOT the same as 2 tbsp, which would be one ounce of volume measure.

Sugar is lighter than water. One ounce of water (by weight) is equal to two tablespoons (by volume).

Other things that are more or less dense than water will have different volume measurements, but if you weigh it on a scale, it will equal one ounce.

There's a great measurement chart for common baking ingredients that crimsicle put together, it's posted in her photos here. That will give you the weight in grams, and one ounce is approx. 30 grams.

hth!

I understand your point and it's a good 1 but not all scales are the same and baking is usually rounded off for ease of measuring purposes.

example..for baking purposes 1 cup=250ml when in fact it is only 227ml
1 ounce weighs 30 grams when in actuality it's only 28.3495231grams
According to crimsicles chart 1/8 cup (2tblsp)would weigh 25.5 oz

my scales at work 2 tblsp weighs 28.51, grams but at home it weighs 28.72 simply because we all may use different measuring tools and leveling off may be slightly different causing different weights
I found these conversions too. All used for baking puposes

Sugar, granulated - 1/2 lb. equals 1 cup,
- 1 ounce. equals 2 tablespoons

White Sugar

U.S. Cups To Grams
1/8 cup ...... 30 grams (1/8 cup = 2tblsp=30 grams=1 oz)
1/4 cup ...... 55 grams
1/3 cup ...... 75 grams
3/8 cup ...... 85 grams
1/2 cup ...... 115 grams
5/8 cup ...... 140 grams
2/3 cup ...... 150 grams
3/4 cup ...... 170 grams
7/8 cup ...... 200 grams
1 cup ...... 225 grams

These are from an earlier post of mine
