Has anyone ever done a meringue roulade? I have some requests but I'm not getting it right.... Please help!

My recipe says 10 egg whites, whisk to stiff peaks with 1 cup sugar, vanilla. Bake in a 250 oven for about 30 mins. or until done. I found that the roulade cracks if I keep it for 30 mins. if less it's not cooked enough. What am i doing wrong?

Thanks for your time...

Try lower heat for much longer (like 200 degrees for an hour or two), and don't open the oven until they're dried. (You want to dry the meringue more than bake it.)

Try it with just one or two egg whites at a time until you get the times and temps working.

BTW, 1 cup sugar to 10 egg whites looks like not nearly enough sugar to me.
