I made one and it was super, but for the life of me I cannot remember how I made it.

It was from a boxed mix

I have made carrot cake from a mix, I can't remember if it was Pillsbury or Betty Crocker, but I don't think it was DH? It was very good, my clients all liked it.

I use the following recipe from the cake mix doctor:

1 pk of yellow cake mix
1 pk instant vanilla pudding (3.4ounces )
2/3 cup orange juice
1/2 cup vegetable oil
4 large eggs
2 teaspoon cinnamon
3 cups grated carrots
1/2 cup chopped walnuts or pecans

This recipe makes 2 - 8 in o 9 in , mix cake mix, pudding, orange juice, oil, eggs and cinnamon with electric mixer for 2 minutes. Fold in carrot and nuts.
Bake at 350F for 30-35 or until done.
Decorate and fill with cream cheese frosting

I love BC's carrot cake box mix. It tastes great, and my customers really seem to love it, too. Very moist!

I make a carrot cake that is, according to my mom, grandmother and father in law, is the best carrot cake they have ever eaten. I'm not a huge carrot cake fan, but I thought it was pretty good myself.

I used a carrot cake box from Betty Crocker

Dry stuff:
box mix
1 cup of flower
1/2 cup sugar
2 tbs of cinn
1 tsp of nutmeg

Wet stuff:
4 eggs
1 cup sour cream
1/2 cup of heavy whipping cream
1 cup melted butter
2 cups grated carrots

and the secret ingredient was 1/2 cup Captain Morgans spiced rum.

I think it would taste just as good without my secrete ingredient - but I wanted to give it a try.

Then baked it all at 320 for about an hour.

And of course - cream cheese frosting.

That's what i've done and I really liked it.

I have to tell you, carrot cake is only one I really make from scratch (and it's really yummy too) and, ironically, it is the most easy..... all the ingredients go in one bowl which I mix by hand for a minute or two and then right into the pan....

It's the other cakes that I have to bust out the mixer for... I wish they would ALL order carrot cake icon_smile.gif

cindy6250....thanks for the link to the BC site. I tried doctoring a cake mix a while back as an experiment for a wedding cake I had to make. The experiment was a disaster icon_sad.gif and I ended up with 10 cake mixes that I didn't use. Looking at this site, I'm dreaming up all kinds of concoctions I can make with these. I certainly will give the Ultimate Carrot Cake a try though....thanks again!

I have the cake doc book and saw that one....the one I used was a box and some spices and grated carrots.

I'm going to go back to the supermarket in the am to see if it was a BC mix...lol

I have the BEST carrot cake recipe that I use but....this is for a little cafeteria type restaurant and they don't want to pay, so I figured I could give them a "bargain" cake..( maybe 15 bucks) so they can sell by the slice.

It's a little corner Cuban restaurant, I am trying to develop some flavors for them..be it in the filling or the cake itself.

Like

Lime
Guava (yellow cake with guava filling and cream cheese icing?)
Banana
Carrot

These seem like the "hardiest" flavor that I can think of, then there is size of course..!
