
I've been going back and forth with a bride regarding having cheesecake as her wedding cake and got this email from her today. I've never done a cheesecake for a wedding before and I'm not sure what she's talking about - and I don't think she does, either. Can anyone help decipher this?
I am going to have about 130 guests and want the traditional 3 tier cake. Could you stack two cheesecakes of the same size on top of each other to make each layer? My thought is to wrap ribbon around the outside and place flowers on top. If you have made a cheesecake wedding cake before and can tell me how it is usually done that would ge great.
Also how much would it cost for enough pies to feed 130 people?
I guess my real problem has to do with her question that I've highlighted in bold. I think she's asking if I could make each tier 2 layers, right? Is that normal for this type of cake? Also, are cheesecakes iced? Maybe these are stupid questions, but I really have no idea. I'm not even sure about putting ribbon around them b/c they sweat so much. And why is she calling them pies at the end?? Good thing the wedding isn't until next spring!


I made my own wedding cake as cheesecake. I didn't stack them, however. I made three individual cheesecakes, iced them in buttercream, and put each of them on their own stand (three different heights). I put fresh flowers on the top of each cake. It was very pretty and simple, and we served it with a raspberry sauce on the side.
I don't know if cheesecake would stand up as well to the regular stacked construction, but I'm by no means an expert. Cheesecakes tend to be very heavy. (At least mine were) I think it would depend a lot on the consistency of the cheesecake. But you can get the "illusion" of a stacked cake by using a cakestand that has individual plates that are supported by the stand. Wilton makes a few of these types of stands, you can check on their website at www.wilton.com

I actually had a stacked 4 layer cheesecake as my wedding cake 9 years ago. Yes it was iced, 4 different cheesecake flavors and each layer was about 4" high. I only started making cakes a year ago and I wish I had known how they did it. I do remember plastic cake plates and a large cake board. I am thinking that the bride to be is asking to stack 2 cakes to make a thicker cheesecake. This probably wasn't helpful but I just wanted to let you know that it was done. Also, the cake was $800 and served 100. Again - that was 9 years ago. I hope to one day be able to make iced cheesecakes! Good luck!

I have posted a picture from The Wedding Cake Book by Dede Wilson in my photos. I would HIGHLY recommend this book. The cakes are awesome! The picture is of a Cheesecake wedding cake. Three tiers. I have make the cake many times; it is my husbands favorite. The tiers are 3" deep a 6, 9, and 12. I don't think I would stack two cakes for a single tier because of the crust. I think the three inches are enough. The author says this cake serves 85 as it is soooooooo rich. The cake can be cooked in a regular pan. Once refrigerated over night it pops right out. This cake is frosted with a white chocolate cream cheese icing and topped with a quince glaze. This cake is absolutly to die for!

Wow!...Usually I could figure these things out...but she threw me for a loop when she mentioned "pies" at the end...hmmmm...LOL! Here is a link for a site that does cheesecake wedding cakes...I think it said some of the cheesecakes were iced in chocolate ..probably modeling chocolate...I'm just guessing. Anyway, maybe you can look at this site and it will answer some questions about "pies" LOL....I mean...er..umm...Cheesecakes!

Wow, thanks for the help, everyone! I knew they could be stacked but I wasn't sure about the icing. I know when I take my cheesecakes out of the fridge that they tend to sweat on the top and I just assumed that would screw up the icing. Any thoughts on that? Thanks, again!
Oh, and I only charge $25 for a basic 9 inch cheesecake. What do you think?


I had a cheese cake wedding cake. It was 3 tiers on the Wilton floating tiers cake stand. The sides and borders were done in cream cheese frosting, and it had fresh strawberries on the top of each layer.
ETA: the link for the Wilton cheese cake wedding cake, was the cake I had done for my wedding cake.

Toba Garrett in her book The Well Decorated Cake has a recipe for a chocolate cheesecake without a crust. She suggests alternating layers of chocolate cake with layers of chocolate cheesecake to form the final cake and in betweens she alternates her chocolate frosting recipe with her cream cheese frosting. Then she suggests icing the whole thing with buttercream. It sounds delicious and I would love to try it. I think that if you crumb coat the cheesecake, that would take care of the moisture on top and then you apply the final coat. And I don't charge for cakes but $25 doesn't sound enough for a cheesecake. As someone else mentioned, they are a pain to make.

I know it can be done.. elegant cheese cakes makes them almost exclusively. The site was given already and she does great work.. as for your price.. way too low. That'd barely cover costs.. Even an 8" "cheesecake" at the grocery store costs $15.00.. and they are totally fake. The cream cheese will costs you 10$ alone. (at least in my area.. one block of philly is $1.99 and my recipe calls for 5). I wouldn't make a cheesecake for under $50.00. Between the mixing and the cooking and the cooling and all of it.. it's a lot of work.

I attended a wedding in Sarasota, FL that had a cake like you described. It was from a place called Mr. Cheesecake and was, hands down, the best wedding cake that I've ever eaten. It looked like a normal stacked buttercream cake. Each layer was a different flavor. I tried like crazy to track this business down with every hope of sweet talking them out of their secret but had no luck at all.

Holy crap. OK, now the problem is that I made a cheesecake for the bride already and only charged her $25. I was going to charge more for chocolate or turtle, etc. but how can I charge more now? I'm using a recipe I found here and everyone has liked it a lot. I personally can't stand cheesecake.

If you've already given the woman a quote for her vision, you're kind of out of luck. You could say something like, "I'm so sorry bride, but this cheesecake wedding cake thing is very new to me, so I went back and actually calculated my costs. If I were to charge you only $25 per cake for 3 cakes, I wouldn't be making any money at all. A more accurate and *firm* price quote is xxx, and here's the contract to lock in that price, even if ingredient prices go up." But you'd have to have balls to do that.
If you haven't given her a price quote for a wedding cake, you can say soemthing like, "making stacked wedding cakes is a very different thing than making just a 9" round standard cheesecake. You can choose to have a table with lots of single cheesecakes at the $25/cake price, but if you want a wedding cake, something stacked and engineered, there are a lot of extra costs and considerations involved, and the price for that product will be xxx."
I'd probably do chocolate transfers/collars for the sides and fill in the top with flowers or fruit or something. I wouldn't want to mess with icing on cheesecake, for one thing, and I wouldn't want to eat cheesecake with icing on it, for another. But I'm kind of a cheesecake purist.

next week Im doing a cheesecake wedding cake (stacked) Each teir will be 2 layers of lemon pound cake with a full raspberry cheesecake in the middle,frosted in b/c and then rolled in chocolate wrap...............Thats gonna be some heavy cake!!!!
